Thirty years ago, the Cerrado region was virtually unknown to the world; it existed as a desolate mountain range quietly situated in Brazil. In fact, "Cerrado" means "savanna" or "wild land" in Portuguese. Today, however, Cerrado has become a renowned coffee-producing region with flat plateaus ideal for large-scale mechanized cultivation. Its unique soil and abundant groundwater are essential ecological conditions for producing high-quality coffee.

Cerrado's superior soil and climate are naturally endowed. Early coffee farmers who developed this land integrated modern agricultural concepts with Cerrado's agricultural techniques, overcoming harsh natural environments and transforming this "wild land" into a cultivation area for producing high-quality coffee, which has become the pillar of local economic income. Currently, Brazil's Cerrado coffee has become synonymous with high-quality coffee.

In 2005, the high-quality Arabica coffee harvested in Cerrado was officially certified as "Cerrado Coffee" by the Brazilian government according to international standards, and declared as recognized. To use the Cerrado designation within the region, products must pass certification tests and meet production quality standards. The evaluation of green beans must include certified production areas, production area elevation, confirmed varieties, optimal soil, and best agricultural practices. Additionally, in terms of quality, beans must score over 75 points through SCAA evaluation methods to be granted the Cerrado designation.

Among Brazil's vast 27,000 square kilometers of coffee cultivation area, the most famous production region is undoubtedly the Cerrado region in the southern state of Paraná.

Unlike other Brazilian production areas that prioritize quantity, Cerrado's coffee beans are renowned for their superior quality. The Cerrado region has an altitude of approximately 1,000 meters, with an average annual temperature of around 21°C. Most importantly, the local soil is extremely fertile, containing rich minerals that provide ample nutrition for the coffee beans produced.

Charming Sweetness, Special Flavor of Tropical Fruits and Nut Almonds

In terms of flavor expression, the initial taste presents the aroma of tropical fruits and nut almonds, while the aftertaste carries the flavor of genmaicha (Japanese brown rice tea). At lower temperatures, it reveals different layers of almond sweetness, milky fragrance, and tea notes.

Natural Processing, Preserving Original Aroma

Among the numerous coffee processing methods, natural processing is the most common approach for coffee beans, but it best preserves the original aroma of the beans. Natural processing allows coffee beans to naturally mature within the fruit, unaffected by external environmental factors, resulting in rich body and intense flavor.

Knowledge Expansion

Brazil Cerrado originally did not meet the high-altitude, shade-grown cultivation requirements of specialty coffee beans. However, through a stroke of serendipity, it developed its unique characteristics: low acidity with pronounced nutty flavor, excellent sweetness and body, with less prominent floral and fruity notes, creating the popular Brazilian soft bean flavor profile.
