Ethiopia is perhaps the most captivating of all coffee-producing countries. Beyond the unique and outstanding coffee produced within its borders, mysterious legends associated with local coffee further enhance its charm. Ethiopian coffee, with its exuberant floral and fruity aromas, has opened many coffee professionals' eyes to the diversity of coffee flavors.

Ethiopia is recognized as the birthplace of coffee, and this statement is not incorrect, but it requires some explanation. The coffee industry has long regarded Robusta as Arabica's ugly sister, until an interesting genetic discovery uncovered this mystery: When scientists conducted gene sequence comparisons, they discovered that these two varieties are not siblings or cousins at all - Robusta is actually one of Arabica's parents. The most likely birthplace of Arabica was in southern Sudan, where Robusta cross-pollinated with another coffee species, Eugenioides, thereby creating the entirely new Arabica variety.

Ethiopian Yirgacheffe is a coffee universally loved by the public and commonly found in many coffee shops. "Yirgacheffe comes from a place called Yirgacheffe in Ethiopia" - this is generally how people understand it. However... the above statement is actually not entirely correct! Because Yirgacheffe has become so famous that it has evolved into a flavor concept rather than purely a geographical origin.

Yirgacheffe stands out among Ethiopia's many native varieties with its unique flavor profile, making it truly exceptional among Ethiopian coffees. It boasts delightful fruit sweetness and acidity, with its most representative characteristics being citrus and lemon aromatics alongside jasmine floral notes. It also carries subtle sweetness reminiscent of orange peel, raisins, and cinnamon. Lighter roasted Yirgacheffe offers fruit tea-like aromatics and the fragrance of high mountain tea, with a fresh and bright mouthfeel. Washed Yirgacheffe presents bright and clean flavors with acidity that further highlights its distinctive characteristics, while natural processed Yirgacheffe displays wild wine-like notes with gentle aromatics, offering a truly unique flavor profile.

Yirgacheffe is Ethiopia's most famous coffee-producing region, located in the small Gedeo zone of southern Ethiopia. The harvested coffee beans come from local small-scale farmers, representing the collective efforts of many coffee-growing families. Initially, Yirgacheffe coffee beans didn't attract much attention because their small size didn't conform to the popular notion that bigger is better. However, coffee enthusiasts who tasted Yirgacheffe were astonished that coffee could possess such distinct floral aromatics and lemon-citrus notes, leaving a lasting impression. As a result, Ethiopian Yirgacheffe gained increasing fame, becoming renowned worldwide during the third wave of specialty coffee.

Yirgacheffe is not only the most popular single-origin coffee in the specialty coffee world but even attracted the attention of Starbucks, who coveted this name. In 2004, Starbucks attempted to register "Yirgacheffe" as their brand trademark, which angered Ethiopian authorities and global coffee enthusiasts. It wasn't until 2007, when the Ethiopian government filed an international lawsuit, that the name Yirgacheffe coffee was finally liberated.

Knowledge Expansion

The biggest transformation in Ethiopia's coffee industry in recent years has been the establishment of the Ethiopia Commodity Exchange (ECX) in 2008, which has attracted significant attention from specialty coffee buyers.

Similar to how only wine produced in France's Champagne region can be called champagne, only coffee grown in Colombia and harvested entirely by hand can be called "Colombian Coffee," possessing unparalleled quality and flavor compared to coffees from other regions.
