Step 1: Preparing the Filter
First, use hot water to wet the filter paper while simultaneously warming the filter cup and sharing pot.
Wetting the filter paper is a crucial step. Coarse filter paper has a paper taste, and wetting it prevents this from affecting the coffee's flavor during the brewing process.
At the same time, warming the sharing pot prevents the coffee from cooling down as it filters through, which would affect the taste.
Step 2: Adding Coffee Grounds
Next, pour in the ground coffee.
The selection of roasted beans and the grind size of the coffee particles will both affect the coffee's taste. If the grounds are too coarse, water flows too quickly and extraction is incomplete; if too fine, extraction becomes excessive and the coffee easily turns bitter.
After adding the grounds, there's a small detail to pay attention to: gently tap the filter cup to make the coffee grounds even and level, which facilitates the subsequent brewing process.
Step 3: The Critical Pour
Now we come to a technically crucial point: using 90-degree hot water from the pour-over kettle, slowly pour from the center of the coffee grounds, spreading evenly outward, but be careful not to pour water onto the filter paper walls outside the coffee.
This process is absolutely the most difficult without considerable practice. When the water has thoroughly wet all the coffee grounds and begins to drip, stop pouring and let the coffee grounds fully awaken, allowing them to bloom for 60 seconds.
Note: The 60-second bloom time is just a reference. Different beans and different roast levels require different bloom times; there's no unified time standard.
The moistened and awakened coffee grounds fully release carbon dioxide, expanding and bubbling up with vitality. After 60 seconds, begin pouring from the center again for the true circular pour-over technique.
At this point, the pour-over stream should neither be too strong nor break. Move in circles, allowing the coffee grounds to fully filter and infuse as the oils continuously emerge. Experienced coffee enthusiasts can tell at a glance that this is definitely a high-quality classic pour-over coffee.
The final product in the sharing pot will be at the perfect temperature, overflowing with aroma, waiting for everyone to taste.
Key Points for Pour-Over Coffee
In fact, the most crucial points for pour-over coffee are:
- You must use freshly ground, freshly roasted, high-quality coffee grounds - this is key to creating crema.
- Ensure thorough blooming to allow water to flow smoothly through.
- Control the pour-over stream carefully and avoid pouring onto the filter paper.
- Maintain proper water temperature. The water temperature is actually related to the bean's roast level. If the water temperature is below 85 degrees, the grounds won't fully open up.
