The potential of Colombian specialty coffee is enormous.
In the past, Colombia focused more on the commercial coffee bean market. However, after 2001, Colombia began to enter the relatively niche specialty coffee market, much slower than Brazil and Guatemala in Central and South America. This was mainly because Colombia did not see the potential of the specialty coffee market at the time, only starting to catch up after 2000! But even though they were one step behind, Colombia's environment is extremely suitable for specialty coffee growth. Not only is its terrain rich and diverse, but it also has low latitude and high altitude, giving it tremendous explosive power in specialty coffee compared to Brazil!
Colombian Coffee Growing Regions
The specialty coffee bean growing regions are mainly concentrated in the south, with altitudes around 1,500 meters above sea level. The area has many volcanoes, creating several renowned specialty growing regions, including Cauca, Huila, Meta, Tolima, Nariño, and others. The main flavor profile is caramel aroma, with delicate berry fragrance and acidic notes, and noticeable sweetness!
Cauca Department is part of Colombia's coffee origin certification regions, located in southwestern Colombia, bordering Narino Department and Huila Department, serving as important regions for Colombian specialty coffee.
80% of Cauca consists of mountainous terrain, with an average altitude of around 1,800 meters, reaching up to 2,100 meters at its highest. The eastern and central parts have parallel mountain ranges that are part of the Andes Mountains. The central mountain range includes two main volcanoes (Sotara and Petacas), with the perpetually snow-capped Huila mountains winding along its borders. The Cauca coffee growing region is surrounded by towering mountains. These majestic peaks not only block air currents and moisture from the Pacific Ocean but also prevent trade winds from the south. Combined with its proximity to the equator, this allows the region to maintain stable, humid climate and abundant sunlight throughout the year. The area's unique topography, climate, rainfall patterns, and nutrient-rich volcanic ash soil provide an exceptionally favorable and unique environment for growing high-quality coffee.
The relatively large day-night temperature difference averages about 11°C annually, while daytime average temperatures are around 18°C. The day-night temperature difference is a crucial factor in producing quality coffee. The relatively cool nights and high altitude slow down the coffee growth rhythm, allowing coffee seeds and beans to fully absorb nutrients from the coffee fruit, thereby creating better acidity in Cauca coffee and the special sweetness that is particularly praised in the industry.
All coffee from the Cauca region is hand-picked and processed using the washed method, ensuring the high quality of its green coffee beans. Premium Cauca coffee typically presents rich floral aromas, high acidity, pleasant sweetness, medium body, and pure, smooth special flavor characteristics. It mainly exhibits a series of distinctive flavors similar to berries, caramel, dark chocolate, and grapefruit, with a sweet aftertaste that leaves a lasting impression.
