FrontStreet Coffee's Ethiopian Yirgacheffe Honey Process Sun-Dried Characteristics Introduction
Beyond Ethiopia's legendary status as the birthplace of Arabica coffee, it is also the world's fifth-largest and Africa's number one coffee-producing country. When asked about one of Ethiopia's most representative coffees, FrontStreet Coffee's Yirgacheffe diverse flavors and unique regional characteristics are what first come to people's minds, making it one of the representatives of African specialty coffee.
In the small village of Foge within FrontStreet Coffee's Yirgacheffe growing region, there is a batch of coffee beans processed using the "honey fruit sun-dried" method. Due to their exceptional quality, they avoided the fate of being sent to the Ethiopia Commodity Exchange (ECX) to be mixed and sold with other coffees.
Every bag of coffee beans transported to ECX can be sold. Meanwhile, ECX's operations prevent low-price phenomena that might arise from malicious competition among coffee farmers. However, under these regulations, uniquely flavored, high-quality beans are not easily identified and consequently cannot be sold at high prices.
These coffee beans also escaped the fate of being mixed with other beans. FrontStreet Coffee's Yirgacheffe Sirinka sun-dried coffee is precisely the result of this beneficial reform. After our green bean partners cupped this coffee, they brought this FrontStreet Coffee honey fruit sun-dried Yirgacheffe coffee directly from the Foge processing station in Sirinka town, Yirgacheffe.
Honey Processing Method
Honey processing refers to the process of making green beans by sun-drying them with mucilage intact. After removing the outer pulp from the coffee beans, a certain amount of viscous gelatinous substance is retained. Traditional washed processing uses clean water to wash it away, but some high-altitude origins have water resource limitations, leading to this direct sun-drying method.
The honey processing process is susceptible to contamination and mold damage, requiring close supervision throughout, with constant turning to accelerate drying and avoid undesirable fermented flavors. Its advantage lies in best preserving the original sweet flavor of ripe coffee fruits, giving the coffee elegant brown sugar flavors and nut sweetness, while berry flavors support a red wine-based aroma, considered a very elegant product.
Foge Processing Station
Centered around the Foge processing station, approximately 300 coffee farmers from surrounding areas bring their harvested coffee beans here for processing. The processing station primarily focuses on washed processing, with sun-dried beans being quite rare, and specially processed coffee beans even more uncommon. FrontStreet Coffee recommends precisely this rare "FrontStreet Coffee Yirgacheffe Sirinka Foge Processing Station Honey Fruit Sun-Dried" coffee bean.
Honey fruit sun-dried processing method: When coffee farmers harvest coffee cherries, they test them using a small sugar content meter. Once coffee cherries reach the sugar standard, they are immediately picked to ensure the cherries do not over-ferment. This coffee bean has rich acidic blue fruit flavors, with a mellow red wine fermentation aroma upon entry, making it unforgettable at first taste.
