Rose Valley: Anaerobic Double Enzyme Wash

This bean uses the special anaerobic processing method that has gained popularity in recent years. Through washing, defective coffee beans are removed, and finally, the processed coffee beans are placed in a sealed container. Carbon dioxide is injected to expel oxygen, slowing down the decomposition rate of sugars in the coffee mucilage in an oxygen-free environment. The pH also declines at a slower rate, extending fermentation time to develop better sweetness and more balanced flavors in the coffee.
