The hulling process involves using a hulling machine to grind off the parchment shell, then drying again until the moisture content reaches approximately 12%-15%.
Indonesia's rainy season overlaps with the coffee cherry maturation season, making it difficult to use the sun-drying method for coffee beans. This led to the development of the "Sumatran-style" processing method with regional characteristics.
