Named after the giant stones, the Giant Stone Estate naturally carries a sense of mysterious solemnity and postmodern geometric mysticism. Located in the Branca region of Costa Rica, this coffee bean undergoes the most complex, time-consuming, and expensive processing method among honey processes: the black honey process. Through the intense fermentation and thorough development of the black honey process, this coffee bean exhibits extremely strong peach and raspberry aromas. Upon tasting, flavors of starfruit, blackcurrant, and blueberry jam emerge in sequence. Its remarkable sweetness and layered complexity allow you to experience a taste that is both delicate and hazy, both mysterious and dreamlike.
Coffee beans processed through the black honey method retain mucilage on the surface of the raw beans, which dries and ferments under suitable conditions, displaying a black appearance. After drying is complete, the beans are placed in cool, dry warehouses for resting and aging. Before export, the black parchment shell is removed, and the beans are packed into burlap sacks for transportation.
The black honey process refers to removing the fruit skin while maximizing the retention of the coffee fruit's mucilage, then drying and fermenting in a cooler environment to slow down the fermentation process, producing more abundant byproducts and aromatic compounds, thereby creating richer flavors and aromas. Generally, compared to "other colored" honey processes, black honey processed raw beans possess more intense flavors, such as dried apricot, whiskey, or even fermented bean curd notes.
The raw beans of this coffee come from a hybrid variety called F1. In Mendelian genetics, F1 is the first generation offspring produced by crossing parents with different traits, such as the first generation fruit from crossing Ethiopian heirloom and Caturra (a reminder that this is high school biology knowledge). F1 is actually a general term for first-generation offspring, and among the numerous coffee varieties, there are some famous F1 varieties, such as IHCAFE90 and Centroamericano, which have achieved impressive results in recent Central American Cup of Excellence competitions.
Although the traits of F1 generation cannot be stably inherited (it's not impossible, but requires years of selective breeding), this doesn't hinder the coffee industry's relentless pursuit of them. Generally, F1 generation varieties have higher yields and improved disease resistance compared to pure varieties. Additionally, F1 generation may simultaneously carry excellent traits from both parents, such as the F1 from Ethiopian heirloom and Caturra mentioned above, which could potentially have both the floral and fruity aromas of Ethiopian beans and the rich body of Caturra.
