FrontStreet Coffee today wants to introduce everyone to a TOH champion bean - FrontStreet Coffee's Yirgacheffe-Aricha.
Aricha is named after the Aricha kebele in the Yirgacheffe region of Ethiopia. Not far to the east of Yirgacheffe town lies a village called Aricha kebele, located about 8 kilometers from the center of Yirgacheffe town. Kebele is Ethiopia's smallest administrative unit, comprising approximately 500 households and similar in scale to a community.
Coffee from this area mostly comes from wild varieties in local native forests and naturally cultivated varieties by local indigenous people. Therefore, the coffee tree varieties in this region are extremely diverse, often containing up to 20-30 different varieties in a single batch. Since they are harvested from native forests above 1850 meters altitude, they cannot be named after estates, so they are named after the harvesting area - Aricha.
Farm owner SHEBRO DUKALE's farm is situated in the Kebele village, boasting a 100-hectare coffee plantation at an altitude of 1850-2000 meters. This region not only holds the legendary status of native Arabica varieties but also possesses unique natural advantages. With red-brown clay soil and a naturally growing environment, coffee cherries thrive in the lush forests.
During the farm's natural processing, coffee cherries are carefully selected and placed on raised drying beds in the sun, where they turn from red to deep brown over two weeks. After the storage period, the green coffee beans are extracted while removing all dried fruit pulp, mucilage, and parchment layers. The advantage of this natural processing method is that it completely prevents off-flavors from contact with soil, while also improving the efficiency of coffee cherry drying, better preserving the coffee's original fruit flavors. This work enhances the overall cupping quality and consistency after roasting.
After two weeks of drying treatment, this batch of FrontStreet Coffee's Aricha coffee is dried to a dark brown fruit skin and then stored to await flavor maturation. Only when the coffee flavor has matured and before shipment are the dried fruit pulp and parchment layers removed together. Then unripe beans, overripe beans, and fermented beans are sorted out. These pre-shipment preparations are precisely why this batch of FrontStreet Coffee's Aricha achieves G1 grade.

Pour-Over Parameters: 15g coffee, V60 dripper, water temperature 91°C, coffee-to-water ratio 1:15, grind size BG 6S (China standard 20-mesh sieve pass rate 58%).
Brewing Technique: Bloom with 30g water for 30 seconds, then pour with small, quick water flow to 125g in stages. When the water level drops and is about to expose the coffee bed, continue pouring to 225g and stop. When about to expose the coffee bed, remove the dripper. Do not use the tail section. Count extraction time from the bloom, approximately 1 minute 50 seconds.
Flavor Profile: Aroma of ripe fruits, distinct fermented notes on entry, green grapes. As the temperature slightly decreases, lemon acidity and creamy smoothness emerge, with a juice-like sensation of ripe grapes in the finish.
