Our store currently has a washed Gotiti, and today we're sharing a natural processed Gotiti to see what makes this bean special!

Gotiti Cooperative Introduction

First, let's introduce the Gotiti Cooperative, located in the Woreda production area at the southeastern end of Yirgacheffe. It was originally part of the Woreda Cooperative under the Yirgacheffe Union YCFCU. However, as people pursued greater traceability in coffee beans, individual "single-origin" areas were discovered one by one by coffee hunters worldwide. Therefore, in 2012, Gotiti, with about 300 member farmers, independently established the "Gotiti Cooperative." Gotiti village was one of the first village areas to be separated, and many small farmers were originally members of the Woreda Cooperative, so their coffee production skills are unquestionable.

Green Bean Processing

The Gotiti Cooperative is known as the last pure land of Yirgacheffe, so it also adopts very traditional processing methods.

Natural Processing

Farmers carefully select fully mature coffee cherries during harvest and send them directly to the processing plant, where they are spread on African raised beds for natural drying for 2-3 weeks.

During the natural processing period, workers remove unripe berries and rely on experienced workers to regularly turn the coffee fruits to avoid damage to the green bean flavor during drying. The selection of breathable mesh fabric for the raised beds, the thickness of the exposed berries, and other factors are all carefully considered. After natural processing is complete, the dried fruit flesh and parchment layer are removed, and the green beans are stored in the warehouse until the moisture content drops to 11-12% before export.

Cupping Notes

During cupping, we experienced honey peach and sweet orange aromas in the dry fragrance, accompanied by some white floral notes. In the cup, the coffee carries fresh strawberry and lychee flavors, with citrus-like bright acidity and the sweetness of cane sugar, medium body similar to yogurt, and an elegant floral aftertaste that is delicate and lingering.

Optimal Extraction

This optimal extraction method highlights the bright citrus fruit acidity while making the flavors more prominent. The front section features strawberry and sweet orange flavors with clear, uplifting citrus acidity; the middle section presents floral notes and cane sugar-like sweetness; the finish is round and smooth with a brief tea-like sensation.

Region: Yirgacheffe

Variety: Local native varieties

Altitude: 1800-2000m

Processing Method: Natural

Pour-over Parameters: 15g coffee, V60 dripper, water temperature 91°C, powder-to-water ratio 1:15, grind size BG 6S (China standard 58% pass-through rate through #20 sieve).

Technique: Bloom with 35g water for 30 seconds, then quickly pour with small water flow to 125g in sections. When the water level drops and is about to expose the coffee bed, continue pouring to 225g and stop. When about to expose the coffee bed, remove the dripper. Do not use the last section of water. Extraction time should be around 2 minutes from the start of blooming.

Flavor: Citrus, strawberry, tropical fruits, berries, brown sugar

Knowledge Extension: Gedeb (translated as Gedi Bei) is currently a relatively small micro-region within the Yirgacheffe production area of Ethiopia. The Gotiti Cooperative is located within the Gedi Bei region.
