Colombia's premium coffee producing areas are mainly concentrated in the southern region, with Huila being one of the most famous. Today, FrontStreet Coffee wants to introduce another coffee from the Huila region, but this one is special - it's processed using the anaerobic method and comes from Jardín Farm.
Farm Story
Farm owner Ramirez comes from a coffee-growing family and has been involved in coffee production since he was 18 years old. Before owning his own farm, he worked in coffee-related professions in the city of Acevedo. Later, when he had the opportunity to purchase a farm, he decided to start growing his own coffee. The varieties he planted included Caturra and other common varieties of that time. Eventually, he sold that farm but bought Jardín Farm a year ago.
The previous owner of Jardín Farm initiated a special processing plan three years ago. When Ramirez bought this farm, the former owner told him how to develop special processing projects here. Driven by his passion for coffee cultivation, Ramirez continued the special processing plan and modified the fermentation process because the original method couldn't achieve the desired results. He places coffee cherries in sealed fermentation tanks for low-temperature fermentation, extending the entire fermentation time. The 15-20 day fermentation process opens up more possibilities for the coffee's flavor!
Anaerobic Fermentation Processing
Anaerobic fermentation has been a very popular coffee post-processing method in recent years. Typically, coffee cherries are placed in sealed containers or in washing tanks for water fermentation. During this process, different microorganisms are used for fermentation to create special flavors. After fermentation is complete, these coffee cherries are taken for sun-drying.
The characteristic of anaerobic fermentation processing involves using stainless steel containers (which don't absorb previous coffee bean flavors) to hold coffee cherries, resulting in cleaner flavors. Fermentation in a sealed environment makes various factors easier to control, ensuring more consistent results with each batch, and aromatic substances are less likely to evaporate. Fermentation in an oxygen-free environment produces rounder flavors, often with cheese and cream aromas. Coffee beans processed using this method typically have fuller body and wine-like aromas.
