Yirgacheffe coffee is deeply loved by coffee enthusiasts, and FrontStreet Coffee is no exception. FrontStreet Coffee has found another excellent coffee from its sun-dried FrontStreet Coffee Yirgacheffe — FrontStreet Coffee Worka. This sun-dried processed coffee has slightly larger beans with slightly lower density and moisture content. Every coffee from this processing station can be considered high-quality specialty processed coffee, exhibiting characteristics superior to other coffees regardless of the processing method used. The coffee beans from here can be considered the best in the Yirgacheffe region.
After the processing station screens available coffee cherries, the whole cherries with complete pulp and skin are placed on raised beds for sun-drying. It is this labor-intensive raised-bed drying method that isolates them from ground contact, preventing earthy off-flavors during the drying process and creating exceptionally clean fruit flavors. After more than two weeks of sun-drying, the dark brown coffee cherries are professionally stored to await full flavor maturation. Before shipment, the processing station removes the coffee beans from the cherries, resulting in remarkable sweetness.
Kochere is a small production area located about 25 kilometers southeast of Yirgacheffe. The harvested coffee beans come from local small-scale coffee farmers, forming a collective of numerous individual small coffee farmers. These small farmers have an average coffee cultivation area of about 1 hectare, at an altitude of approximately 1,900 to 2,000 meters. The coffee varieties are mainly a mix of Typica and Heirloom (local native varieties). Due to this region's relatively advanced green bean water processing equipment, it has always demonstrated high-level performance in washed processing. Its clean sweetness with complex honey and citrus notes is widely praised. The main local production model involves small coffee farmers delivering harvested red cherries directly to nearby cooperative washing stations for unified processing.

Processing Method: Sun-dried (Worka places great emphasis on sun-drying processing, which shines in cupping. The coffee berries are stacked at appropriate thickness on raised beds. Different breathable materials are used as the base layer of the drying beds according to different drying stages. During the drying process, extensive manual labor is used to remove defects and unripe beans. Meanwhile, the movable raised beds can be adjusted according to sunlight and weather conditions. Under 15~21 days of continuous careful attention, charming, uniformly colored dried berries are created, along with the clear jasmine aroma of high altitude and rich fruit flavors.
Pour-Over Parameters: 15g of coffee, V60 dripper, water temperature 91°C, coffee-to-water ratio 1:15, grind size BG 6S (Chinese standard 20-mesh sieve pass rate 58%).
Technique: Bloom with 30g of water for 30 seconds, pour evenly with small water flow to 125g in segments. When the water level drops and is about to expose the coffee bed, continue pouring to 225g, then stop. When about to expose the coffee bed, remove the dripper. Do not use the last 5g of water. Start timing from the bloom, with extraction time around 2 minutes.
Flavor: Jasmine, lemon, cane sugar, berries, with a juice-like mouthfeel
Knowledge Expansion: Ethiopia began introducing washed processing technology in the 1970s. Currently, the Kochere production area primarily focuses on washed processing for its green beans.
