Flavor Description:

The dry aroma presents wine, strawberry, peach, and citrus notes.

Upon sipping, the entrance is dominated by wine, strawberry jam, grape, and peach notes, accompanied by citrus and floral aromas. The aftertaste is chocolate, with a smooth mouthfeel. The wine and berry flavors are rich, full, and balanced.

Kotowa originates from the indigenous language, meaning "mountain." Over a hundred years ago, Alexander Duncan McIntyre came to Panama. He was deeply attracted by the simplicity of the people and the beautiful environment, and his family began planting coffee here. Today, it is operated by the fourth-generation successor, Ricardo Koyner. Kotowa owns a total of four coffee estates: Finca Kotowa Duncan, Finca Kotowa Don K, Finca Kotowa Río Cristal (Crystal River), and Finca Kotowa Tradicional.

Don K Estate is situated at an altitude of 1700-1750 meters, located on the western slope of the Boquete region beside Baru Volcano. It sits opposite Duncan across the volcanic ridge line. Although belonging to the same producing region, the microclimates on both sides of the canyon bring completely different flavors to the coffee from these two estates. The nights are cool and frost-free, while the days are dry and sunny. It is deeply influenced by the microclimate where Pacific and Atlantic air currents meet. During the growing season, rainfall is abundant, with distinct wet and dry seasons. Additionally, the volcanic zone's lava contains rich minerals, providing sufficient nutrients in the fertile volcanic black soil with good drainage. The terroir conditions are exceptionally favorable.

During the harvest season, fully ripe red-purple cherries are carefully selected and processed using modern pulping equipment. Local natural and clean water sources are used to wash coffee berries and remove pulp. Compared to other processing stations, only half a liter of water is used per pound of green coffee beans here, saving approximately 10 to 20 liters of water resources. The pulp and wastewater are reused as organic fertilizer. After natural drying, the green coffee beans are stored in a constant temperature warehouse at 45 degrees. After resting for two months, the moisture content of the green beans will tend to be consistent, the flavors will become more mature, and the aroma and taste will be more charming. This mountain is a corner of Baru Volcano.
