Panama's terroir conditions are exceptionally suitable for coffee cultivation: high-altitude plantations, fertile volcanic soil, and a cool climate. This region has also nurtured one of the most popular coffee varieties in recent years: Geisha.

The Specialty Coffee Association of Panama holds an annual competition called "Best of Panama." In 2004, the renowned Hacienda La Esmeralda entered their Geisha in the competition. Its flavor profile was exceptionally unique, possessing both explosive citrus and floral aromas while maintaining remarkable freshness with a tea-like body that amazed countless coffee professionals. Since then, it has gained widespread recognition, winning numerous awards across various competitions. In 2004, it sold for $21 per pound, and by 2010, the price had climbed to $170 per pound. In 2013, a small batch of sun-processed coffee from Hacienda La Esmeralda sold for $350.25 per pound, undoubtedly becoming the world's most expensive estate coffee.

Hacienda La Esmeralda's Geisha comes in three grades. The highest quality is the Red Label Geisha, grown at altitudes of 1,600-1,800 meters, which participates in global auction bidding annually and is available in both natural and washed processes. Next is the slightly lower quality Green Label. The Blue Label consists of coffee beans grown at 1,500 meters altitude, processed exclusively using the washed method.

Cake Dripper

The cake dripper features a flat bottom and belongs to the semi-immersion extraction category, allowing for longer immersion times. The bottom of the dripper has four holes, resulting in relatively uniform flow rate.

Parameters & Technique:

Water temperature: 90°C; Medium-fine grind (BG 6S: China standard #20 sieve pass rate 58%), coffee-to-water ratio 1:15.

15g of coffee, bloom with 30g of water for 30 seconds. When continuing to pour to 130g, create a分段. When the water level drops and is about to expose the coffee bed, continue pouring to 230g. (Timing starts from the bloom) Extraction time: 2'05"

Flavor Profile:

Aroma: Jasmine fragrance. Taste: Citrus acidity and sweetness upon entry, with chocolate and nut flavors in the middle section, accompanied by honey sweetness. The mouthfeel is relatively full-bodied, with overall balance.

Knowledge Extension: Hacienda La Esmeralda is located at a corner of Baru Volcano. Therefore, coffee beans produced in this region were often named after Baru Mountain before they became famous.
