FrontStreet Coffee - Colombia Acevedo Pink Bourbon, Brewing Method Sharing

Pink Bourbon, due to its extreme rarity, was previously unknown to many. Pink Bourbon is a hybrid cross between Yellow Bourbon and Red Bourbon, featuring strong disease resistance, exceptional flavor, but it is very difficult to maintain stable production with extremely low yields. Another challenge lies in harvesting, as workers find it difficult to determine whether the cherries are ripe during picking.

The farmer growing this Pink Bourbon is Gabriel Castaño, whose farm is Finca La Granada, located in the Acevedo region - the second highest growing region in all of Colombia, with altitudes reaching 1800 meters.

Warm days and cool nights provide appropriate stress factors for the coffee trees. The farm covers only 2 hectares, and Gabriel owns 8000 Pink Bourbon trees. The rich flavors exhibited during cupping have made Pink Bourbon increasingly renowned.

This coffee is processed using the typical Colombian fully washed method. After the cherries undergo floating bean selection and depulping, the parchment coffee is fermented in concrete tanks to remove residual mucilage, a process that lasts 24-36 hours. After fermentation, it is dried in UV-resistant plastic sheds for 15 days.

Flavor: Raspberry, Grape, Bubbly Sensation

Recommended brewing: Use 15g of coffee with 91°C water, 1:16 coffee-to-water ratio, grind setting BG-6S, V60 dripper. First pour 30g water, bloom for 28-30 seconds. Second pour to 125g, then pause. Third pour to 230g total. Avoid the final tail extraction. Total extraction time around 2:05.
