FrontStreet Coffee - Jamaica Blue Mountain Coffee Brewing Parameters
V60 Dripper Brewing:
The Hario V60 series dripper features a wide opening and unique spiral ribbed design that facilitates better airflow and improves extraction quality. The rib structure allows for quick extraction of soluble substances through a pour-over method, resulting in a light, juice-like mouthfeel with distinct sweet-sour notes and aroma. With different pouring techniques and methods, you can achieve various flavors and textures, making it highly versatile for experimentation.
Preparation: 15g coffee grounds, water temperature 88°C, grind size BG 6S (China standard 20-mesh sieve, 60% pass-through rate), water-to-coffee ratio close to 1:15
Technique: First, bloom with 30g water for 30 seconds, pouring close to the coffee surface. For the first pour, continue until reaching 120g, then pause. Wait for the water level to drop by 1/3 to 1/2, then proceed with the second pour until reaching 225g. Control the total brewing time to approximately 2 minutes and 5 seconds.
Flavor Profile: Blue Mountain coffee offers exceptionally clean and mild flavors with chocolate sweetness and strong body. The taste is rich and mellow, with perfect balance among sweetness, acidity, and bitterness—completely free from harsh bitterness, featuring only moderate and perfect acidity, with persistent fruity notes in the finish. When brewed with Kono, Kalita wave, or cake-shaped drippers, the concentration increases, creating a solid, heavy texture with intense flavors. However, V60 dripper brewing produces a refreshing, sweet profile with sugarcane sweetness, followed by notes of nuts and high-concentration dark chocolate in the aftertaste and finish.
Knowledge Bonus:
Pour-over coffee water temperature is generally selected between 92-95°C, based on the roast level of the coffee beans. Since Blue Mountain coffee belongs to the medium-dark roast category, the water temperature should be lower than that used for medium-light roasts. This is because medium-dark roasts can extract bitter flavors when water temperature exceeds 90°C.
