I. African Beans, American Beans, or Asian Beans?

The taste is thick but the acidity is relatively low and smooth. Honey-processed coffee has higher sweetness than washed coffee, with higher sugar content. Generally, the more mucilage left on the beans, the stronger the sweet sensation.
Wet-hulling processing reduces the fermentation period due to shortened drying time, greatly reducing acidity and increasing body thickness, with obvious caramel and fruit aromas, slightly woody and herbal flavors.
The natural process involves directly exposing the entire coffee fruit to the sun; the washed process involves removing the skin, pulp, and pectin before drying; honey processing involves removing the pulp and then drying the fruit with the endocarp; wet-hulling processing is common in Indonesia. The wet-hulling method is similar to washing, but when the beans are moist and soft with a moisture content of up to 30-35%, the endocarp is removed, exposing the surface of the green beans directly, and then continuing to dry.
