FrontStreet Coffee Shares: How Beginners Choose Coffee Flavors

I. African Beans, American Beans, or Asian Beans?

Single-origin coffee can be traced back to its origin - not just to the coffee-producing country, but even to the specific plot of land where the coffee was grown. By getting to know coffee estate owners and深入ing into coffee origins, we can understand the stories behind coffee origins from the source and purchase green beans. Different regional terroirs give coffee beans distinct regional characteristics. The flavor profiles of coffee beans from the three major specialty coffee-producing regions - Asia, Africa, and America - are different, which is the charm of specialty coffee.

Typically, you can prioritize by region: African beans, American beans, or Asian beans.

Flavor characteristics of Central American beans: Latin American coffee is generally known for its balanced flavor, with balanced nutty notes and also fruity notes, but the acidity is not as bright as African coffee, with good body thickness.

Flavor characteristics of African coffee: Rich aroma and charming fruit acidity, with bright and invigorating acidity, but African coffee often has a slightly thinner body.

II. Look at Processing Methods

Natural processing: Naturally processed coffee beans can give the coffee a sweeter and richer taste, with the lowest acidity, obvious sweetness, high body thickness, and slightly lower cleanliness.

Washed processing: Washed coffee has a clean taste without miscellaneous flavors. Coffee beans usually have bright acidity and fruit aroma, with obvious acidity, good cleanliness, medium body thickness, and high stability.

Honey processing falls between the two, with the overall flavor more highlighting the sweet aroma of pectin and fruity tones, similar to the fragrance of mango, longan, honey, and hazelnuts. The taste is thick but the acidity is relatively low and smooth. Honey-processed coffee has higher sweetness than washed coffee, with higher sugar content. Generally, the more mucilage left on the beans, the stronger the sweet sensation.

Wet-hulling processing reduces the fermentation period due to shortened drying time, greatly reducing acidity and increasing body thickness, with obvious caramel and fruit aromas, slightly woody and herbal flavors.

The natural process involves directly exposing the entire coffee fruit to the sun; the washed process involves removing the skin, pulp, and pectin before drying; honey processing involves removing the pulp and then drying the fruit with the endocarp; wet-hulling processing is common in Indonesia. The wet-hulling method is similar to washing, but when the beans are moist and soft with a moisture content of up to 30-35%, the endocarp is removed, exposing the surface of the green beans directly, and then continuing to dry.
