Natural washed: uses high-pressure washing machines to process coffee beans. Semi-washed: combines characteristics of both washed and drying methods.
3. Honey Process or Brazilian Pulped Natural (PN) Process
Moderate acidity, better sweetness than washed process, better cleanliness than natural process, moderate mouthfeel.
Honey process: removes skin and pulp, retains part or all of the mucilage (honey).
Among the three major coffee bean processing methods, washed process has the highest stability, resulting in more acidic coffee; natural process is the sweetest, while honey process falls somewhere between the two.
