FrontStreet Coffee - Ethiopia Sidamo Hambella Natural Coffee Sharing

Most coffee estates in Ethiopia remain in their natural state. Local coffee farmers venture into the mountains to harvest, selecting only fully ripe red cherries, all hand-picked. They use African drying racks, limiting the thickness of the fruit layer and continuously turning them 24 hours a day to ensure even sun exposure and ventilation, more accurately controlling the fermentation degree. Most local processing plants also use traditional natural processing methods, fermenting and drying based on experience, resulting in inconsistent quality.

Hana Assefa is grown at approximately 2250-2350 meters altitude. Evening temperatures are around 12°C, and when temperatures rise at noon, timely shading is provided to prevent sun damage to the red cherries. Fertile soil, special climate, hand-picked mature coffee cherries - the harvested coffee fruit must have a sugar content above 30 before undergoing natural processing, while maintaining the moisture content of the red cherries. After 60-70 days of traditional African wooden rack drying, with precise control of fermentation degree, this coffee develops more fruity sweetness and acidity. Truly deserving of the title "Queen of Flowers"!

This Hana Assefa, when brewed, reveals flavors of peach and passion fruit juice, with unique notes of strawberry, guava, jackfruit, and cinnamon. The rose floral aroma is abundant. Smooth and delicate, with a sweet aftertaste!

Method: Use 15g of coffee grounds, bloom with 30g of water for 30 seconds, then pour to 125g. After seeing the coffee bed, pour to 225g. Remove the filter cup when the coffee bed appears. Total extraction time: 2 minutes
