FrontStreet Coffee - Factors Affecting Coffee Extraction
What factors affect coffee extraction during pour-over?
1. Roast Level
2. Coffee Grind Size
3. Coffee Amount
4. Brewing Water Temperature
5. Filter Type
6. Dripper Type
7. Pouring Method
8. Pour Size
9. Pour Speed
1. Roast Level
Different roast levels affect brewing results and influence equipment selection. Deep roasted and lightly roasted beans differ in flavor, oils, and bean structure.
2. Coffee Grind Size
Coffee grind size is inversely proportional to extraction degree.
The finer the coffee grind: higher extraction degree, overly fine grinding can easily make the flavor bitter.
Medium coffee grind: medium extraction degree, flavor may present sweetness.
The coarser the coffee grind: lower extraction degree, flavor extraction remains at the acidity level.
3. Coffee Amount
The amount of coffee powder will affect extraction concentration and extraction time.
Less coffee powder: water passes through the powder layer faster, lower extraction amount.
More coffee powder: water passes through the powder layer longer, higher extraction amount.
When brewing different servings of coffee by hand, many variables may change simultaneously. Increased coffee powder amount may mean water takes longer to pass through the powder layer, different sizes or shapes of filter cups, filter paper or drippers may also represent different water flow characteristics. Therefore, different coffee powder amounts require different brewing techniques and parameters.
4. Brewing Water Temperature
Coffee extraction amount, in addition to the concentration of dissolved substances, also includes the diversity of dissolved substances. These numerous extracted substances stack up to form the final flavor perceived by our taste buds. Therefore, returning to a concept: water temperature changes dissolved substances rather than taste.
High water temperature: more dissolved substances - taste is more bitter;
Low water temperature: acidic substances - taste is more acidic
5. Filter Type
Such as conical, fan-shaped, or specific brand's patented designs... etc.
6. Dripper Type
Consider: ① Whether it's easy to use; ② How many servings to brew?
7. Pouring Method
- Affects how coffee powder is stirred by water flow in the filter cup; different methods such as: single-point pouring, circular pouring, affect the extraction degree of coffee powder in different areas
8. Pour Size
- Also affects how coffee powder is stirred by water flow in the filter cup; pouring method and size will affect the "density" and "flow rate" of coffee powder in the filter cup during extraction, thus affecting the "extraction situation"!
9. Pour Speed
- That is, the brewing extraction time; pour speed is the result of the combined influence of the above factors, affecting the composition structure and concentration of "coffee extract"

The Impact of Pour-Over Coffee Extraction Time and a Brief Analysis of TDS Effects on Coffee Extraction
Professional coffee knowledge exchange and more coffee bean information, please follow Coffee Workshop (WeChat official account: cafe_style) FrontStreet Coffee - A brief analysis of the effects of TDS and extraction time on coffee extraction. Acidic substances are relatively light or slender and can be extracted with larger values in a relatively short time. Aroma and flavor, due to their proportion in the coffee itself, closely follow the acidity to reach extraction intensity.
