FrontStreet Coffee Yirgacheffe Natural Red Cherry vs. Washed Kochere Coffee Brewing Flavor Comparison

Yirgacheffe is a small town in Ethiopia, situated at an altitude of 1,700-2,100 meters, making it one of the world's highest-altitude coffee-producing regions and synonymous with Ethiopian specialty coffee. Lakes Turkana, Abaya, and Chamo bring abundant water vapor to this area. In the Rift Valley, represented by the Misty Valley, fog prevails year-round with spring-like seasons, gentle breezes, cool and humid conditions. Thousands of coffee tree varieties thrive and multiply here, nurturing Yirgacheffe's unique terroir where floral and fruity aromas intertwine ambiguously and unpredictably.

Initially, Yirgacheffe's coffee trees were cultivated by European monks (somewhat similar to Belgian monks growing wheat for brewing beer), later managed by farmers or cooperatives. Coffee trees grow naturally scattered throughout forests, fields, and backyards. During the harvest season, Ethiopian Coffee Trading Corporation comes to town to purchase coffee beans collected by farmers, ultimately exporting them under the "Yirgacheffe" brand through auctions.

Clever Dripper Brewing Comparison

Brewing parameters: 15g coffee powder / BG-6S / 1:15 ratio / 90°C

Brewing method: Pour water directly to 225g, wait for 3'45" seconds, then filter into the sharing pot. Remove after seeing the coffee bed, ending time: 4 minutes.

[Red Cherry]: Lemon, licorice, citrus, berries, sweet orange, with overall higher sweetness. The aftertaste has caramel and cream flavors, with a finish that carries black tea aroma.

[Kochere]: Lemon, floral notes, orange, cane sugar, with overall clean and refreshing characteristics. The aftertaste has honey flavors and oolong tea finish.
