Kenya Thimanini Girl comes from a micro-region called Karatina in NYERI. The Ndima-ini factory is part of the Gakuyu cooperative, which separated from the large Mathera cooperative in 1996 to become independent. The Gakuyu cooperative has only two factories, Ndima-ini and Kirigu, employing 1,800 staff. The Kirigu factory is named after the Kirigu River, which supplies water for processing coffee cherries near the factory.
Over the past 20 years, about 850 small farmers have delivered ripe coffee cherries to the Ndima-ini factory for processing by factory manager John Kamau. This Kenya Thimanini Girl, unlike the traditional 72-hour fermentation washed processing method of Kenyan coffees, undergoes 80 hours of soaking and fermentation after de-pulping, and is finally naturally dried on raised drying beds.

Brewing technique: Segmented extraction
Use 30 grams of water for blooming for 30 seconds. Pour with a small circular motion to 124 grams, then segment. Continue pouring to 227 grams when the water level drops and is about to expose the coffee bed. Remove the filter cup when the water level drops and is about to expose the coffee bed.
