Introduction to Indonesian Civet Coffee
Civet coffee is just an alias for this coffee; its official name is "Kopi Luwak." In Indonesian, "Kopi" means coffee, while "Luwak" refers to a wild animal called the civet cat. The origin of civet coffee can be traced back to Indonesia's colonial era when the Dutch government prohibited locals from consuming and roasting coffee from the plantations. However, they accidentally discovered that the coffee beans excreted by wild civet cats after eating in the gardens had a completely different and delicious taste.
So how exactly does the beloved civet coffee come about?
Civet cats prefer to select the most ripe, sweet, plump, and juicy coffee fruits from the coffee trees as food. However, only the fruit pulp on the outside of the coffee fruit can be digested by the civet cat, while the extremely hard original coffee beans will be excreted from the body.
After civet cats eat coffee beans, the beans ferment and shed their shells inside their stomachs. Additionally, the hormones secreted by their stomach mucosa break down proteins, and the resulting amino acids reduce the original bitterness of the coffee beans. Since the coffee beans cannot be digested, after washing the feces excreted by the civet cat, the coffee beans become the most valuable raw material.
The longer civet coffee beans are stored, the stronger their aroma becomes. Coffee brewed from civet coffee beans is also relatively thick, leaving fine residue at the bottom of the cup after drinking.
Although civet coffee has a mellow and fragrant taste, modern civet cats are farmed, and the coffee's taste still depends on the quality of the coffee fruits fed to them. While coffee fruit qualities generally vary, Arabica varieties tend to be better than Robusta varieties.
This coffee has a nickname called "the most fragrant feces in history," though the name may not be elegant, it is true. It comes from the feces of a tree-dwelling wild animal called the "civet cat" on the Indonesian island of Sumatra. Local farmers usually consider finding "civet cat" feces as a blessing from heaven, because not all "civet cat" feces can be fortunately found. Once a few such "coffee beans" are found, locals will bend down to pick them up, carefully collect them, and then through several processes such as selection, drying, deodorization, processing, and roasting, create the world's rarest, most unique, and most expensive coffee.
In Indonesian, "Kopi" means coffee, and "Luwak" is the name commonly used by Indonesians for the "civet cat." It is said that the annual production of this coffee does not exceed 500 pounds, with retail prices reaching 550 euros/700 dollars per kilogram, depending on the year, because there is no fixed production every year.
