Coffee Processing Methods: A Comparison of Three Common Methods - Natural, Washed, and Honey Processing

Common Coffee Processing Methods
FrontStreet Coffee introduces three classic processing methods: Natural, Washed, and Honey processing.
1. Natural Processing Method
After removing floating beans, coffee cherries are spread out to sun-dry for 2-3 weeks. During this period, they need to be turned several times daily. After sun-drying, the coffee cherries' moisture content will be between 10%-14%.
After natural drying and resting, coffee cherries become dry and hard. At this point, they are placed in a machine to remove the parchment, pulp, and other layers from the green coffee beans.
Advantages: The process is simple with low costs (especially in water-scarce regions). When properly processed, it yields good body, higher sweetness, and often possesses mature fruit flavors or wine-like aromas.
Disadvantages: Highly dependent on weather conditions, making drying levels difficult to control. During sun-drying, foreign flavors can easily mix in, and because the pulp hasn't been removed, mold can easily develop, resulting in insufficient stability.
2. Honey Processing Method
Selected coffee cherries are placed in a pulping machine to remove the skin and部分 of the pulp.
The green coffee beans, still containing some pulp and mucilage, are placed on drying patios to dry until their moisture content reaches around 12%. Finally, the parchment is removed from the green coffee beans.
Advantages: Honey processing can be considered an upgraded version of the natural method. Since the pulp is removed first, it avoids mold development.
Additionally, there's no need to wash away pulp residues from the coffee beans, which also significantly reduces water processing costs.
In terms of flavor, because green coffee beans are dried while still coated in mucilage, the beans absorb sugars from the mucilage, greatly enhancing the coffee's sweetness.
Disadvantages: The process is tedious with higher costs.
3. Washed Processing Method
Coffee cherries are placed in water to ferment (approximately 24 hours). After fermentation, the green coffee beans with parchment are placed in flowing water channels to wash away pulp and mucilage.
After washing, the coffee beans are dried either by sun-drying or using drying machines until their moisture content drops to around 12%. Finally, the parchment is removed from the green coffee beans.
Advantages: Due to the washing process, coffee quality is more stable.
Disadvantages: The process is tedious and requires large amounts of water for washing, making it relatively costly.
