This batch of FrontStreet Coffee washed Sidamo comes from the Santa Veleni Processing Station. Built in 2004, this processing station is located at an altitude of 1950 meters and covers an area of over 260 mu. It is one of DWD Company's more advanced processing facilities in the Sidamo region, approximately a 40-minute drive from the center of Santa Veleni town.
All fully red cherries are harvested during the mid to late season, approximately from early December to early January, ensuring that all fresh cherries come from higher altitude areas around 2000 meters. The washed processing begins on the same day as harvesting. Since fresh cherries typically arrive at the processing station in the afternoon, the washing process is predominantly carried out at night. After machine removal of the fruit skin and pulp, the coffee cherries undergo fermentation for 36 to 48 hours before washing, then are placed on African raised beds for drying. The drying process typically takes 8-10 days until the moisture content drops to 12%, at which point they are stored until hulling and grading before export.
