Method: Bloom with 35g of water for 30 seconds, pour to 123g then divide, when the water level drops and is about to expose the coffee bed, continue pouring to 164g and stop, remove the flannel filter cloth when the coffee bed is about to be exposed (timing starts from bloom), extraction time is 2'16".
Flavor: Smoky and cocoa aroma, with chocolate, herbal, cream, and licorice flavors in the mouth, with a noticeable caramel sweetness. Overall body is high, but fruit acidity is also quite prominent.
Ratio 1:15
Method: Bloom with 35g of water for 30 seconds, pour to 125g then divide, when the water level drops and is about to expose the coffee bed, continue pouring to 240g and stop, remove the flannel filter cloth when the coffee bed is about to be exposed (timing starts from bloom), extraction time is 2'32".
Flavor: Licorice, cocoa, spice, and nut flavors in the mouth, with soft fruit acidity. Overall mouthfeel is relatively thin with slight astringency.
When using a 1:10 coffee-to-water ratio, the extracted coffee has a thick, full-bodied texture with high richness, and due to the high concentration, the flavors are more concentrated. With a 1:15 coffee-to-water ratio, the extracted coffee has a thinner texture, and combined with the increased extraction time, there's a slight astringency.
