This is a 2019 harvest Colombian Los Pinos Estate anaerobic natural, a special micro-batch coffee customized for flavor profiles. The coffee variety used is Castillo, with an exquisite anaerobic natural processing that imparts rich flavors, exceptional sweetness, and complexity to the coffee beans.

The Los Pinos Estate anaerobic natural features extremely distinctive flavors, just as the name "Fruit Ferment" and the processing method "anaerobic natural" suggest. We need to express sweetness as much as possible while showcasing mature fruit wine characteristics. Our roasting approach is a fully developed light roast, which is characterized by intense and strong flavors while maintaining excellent smoothness and sweetness. Therefore, we hope to present overlapping flavor layers and superior sweetness through the fully developed light roast, maintaining clear flavor expression from high to low temperatures.
