Mandheling Pour-Over Coffee Brewing Guide: Techniques and Sharing

However, this week, we have launched a distinctive variety that stands apart from the ordinary.

FrontStreet Coffee's Mandheling Brewing Method Record Sharing

Mandheling is typically classified as the heroic figure among coffees, with a rich body and intense aroma, carrying a rustic charm that delivers a wild, masculine drinking experience.

However, this week we've introduced a distinctive Mandheling that stands apart from the rest.

As rich as traditional Mandheling, yet with mature fruit notes, gentle fruit acidity paired with hazelnut sweetness, subtle spice undertones, prominent flavors that aren't overpowering, and a smoothness reminiscent of cream cheese.

This Aceh honey-processed Mandheling grows at altitudes of 1200-1400 meters. Beyond maintaining the characteristic body of Indonesian coffee, its unique honey processing method makes it exceptionally sweet.

Brewing Parameters and Testing

In our daily pour-over brewing, we typically choose a grind size with 30% sieve retention for dark roast coffee beans (approximately equivalent to Fuji 3.5).

For our initial attempt, to avoid bitterness common in dark roast beans while fully extracting the flavors of this honey-processed coffee, we chose a shorter extraction time with relatively higher water temperature. The parameters were as follows:

Additionally, here are three different pour-over extraction methods we tested this morning:

Grind size: BG-6S
Dripper: V60
Coffee-to-water ratio: 1:15
Water temperature: 90°C
Extraction time: 2 minutes

Tasting Results

The first cup showed overall balance in flavor, body, and sweetness, with a slight bitterness in the mouthfeel.

After reducing the water temperature in the second cup, bitterness was barely noticeable, while sweetness and body improved significantly, though overall flavor was clearly insufficient.

The third cup, with increased coffee amount, showed enhanced overall flavor, but the excessive concentration masked the sweetness.

Of course, in our daily brewing process, water quality, grind size, and brewing techniques all vary. The above data is for reference only.

In actual brewing practice, we need to make timely adjustments based on the taste in the cup to achieve our desired flavor profile.
