Civet coffee is made by selecting and processing from civet feces, produced in Indonesia. Indonesia grows a large amount of coffee crops and has a wild animal called the civet, which is an omnivore with a pointed mouth and dark gray fur. Indonesians call them "Luwak."
Luwak likes to select the most mature, sweet, plump, and juicy coffee fruits from coffee trees as food. After the coffee fruits pass through its digestive system, only the fruit pulp is digested, while the extremely hard original coffee beans are excreted by Luwak. Through this digestive process, the coffee beans undergo magical changes, with unique flavor and particularly mellow taste that cannot be compared with other coffee beans.
People who generally enjoy drinking coffee have specialized utensils for brewing coffee. For civet coffee brewing, a siphon pot is typically used, then add about 160ml of pure water, pour in 17g of civet coffee powder, wait for the water to boil and rise, then use a flat bamboo stick to gently press down the raised coffee powder. Note that you must not stir at this time, otherwise the coffee will taste bitter, astringent, and sour. Set the water temperature to 96℃, water pressure at 9-10atm, when the water boils for about 1-2 minutes, quickly remove from the heat source, while wiping the glass bottle with a cold wet cloth to cool it rapidly. At this time, the brewed coffee will quickly fall and present golden fine foam, which is the ultimate flavor of civet coffee.
After processing and roasting, civet coffee becomes a luxurious coffee beverage, spreading to luxury kingdoms around the world. Local coffee farmers, in pursuit of high profits, capture wild civets and raise them at home to produce more civet coffee. However, civet coffee produced by farmed civets will have corresponding inferior color and taste. Even so, the production of this coffee is still very scarce, and not all coffee lovers can afford it.
Currently, only Indonesian civet coffee is the genuine civet coffee.
