To make Blue Mountain coffee taste delicious, you need to select authentic Blue Mountain No. 1 coffee beans, use freshly roasted beans for brewing, and employ suitable extraction methods and parameters for Blue Mountain coffee. Next, FrontStreet Coffee will discuss with you how to brew Blue Mountain coffee to make it taste great!
How to Identify Authentic Blue Mountain Coffee?
1. Coffee Bean Price
The Blue Mountain coffee industry faces a series of challenges, such as hurricane impacts, increasing labor costs, and difficulties in mechanizing terrace farming. Many small estates and farms struggle to rationalize cultivation, resulting in limited annual Blue Mountain coffee production. Consequently, the amount of Blue Mountain coffee beans that can be imported to each region is not substantial. The price of authentic Blue Mountain No. 1 roasted coffee beans sold domestically generally ranges between 150-300 yuan. Currently, FrontStreet Coffee sells Jamaica Blue Mountain No. 1 coffee beans at 158 yuan per 100g.
2. Look for Blue Mountain Coffee Wooden Barrels
The Jamaican government mandates that all exported Blue Mountain coffee must be packaged in wooden barrels. Therefore, Blue Mountain No. 1 coffee beans are exported in entire barrels. When purchasing coffee beans, you can check if the seller has complete Blue Mountain barrels. This helps avoid sellers substituting other coffee beans for authentic Blue Mountain coffee.
3. Verify Certificate of Origin
Buyers of Blue Mountain coffee beans (first-hand green bean buyers) can apply for Blue Mountain coffee certification certificates from the Jamaican CIB or estates. This can also prove the authenticity of Blue Mountain coffee beans. Therefore, when purchasing, you can check if the seller has certification certificates issued by the Jamaican government or origin authorities.
Currently, authentic Blue Mountain single-origin coffee beans available in China are all of Blue Mountain No. 1 grade. At FrontStreet Coffee's physical store, you can see the wooden barrels mandated by the Jamaican government for exporting Blue Mountain coffee, as well as the certificate of origin from the Blue Mountain coffee estate (Clifton Estate).
Why Should Freshly Roasted Coffee Beans Be Used for Brewing?
Generally, the pleasant regional flavor characteristics of coffee come from small molecular substances. After roasting is complete, these pleasant small molecular substances begin to volatilize and dissipate. As time passes—that is, when coffee beans become less fresh—these small molecules will completely volatilize, leaving behind larger molecules that create bitterness.
Therefore, to better experience the flavor of coffee, FrontStreet Coffee's baristas and roasters emphasize a "optimal tasting period." The optimal tasting period does not refer to shelf life, but rather indicates that the coffee will taste better when consumed within this period. Coffee beans past their optimal tasting period are still drinkable, but have missed their best flavor window. For this reason, FrontStreet Coffee ships all coffee beans within 5 days of roasting completion.
According to FrontStreet Coffee's roasting style, FrontStreet Coffee's roasters recommend an optimal tasting period within one to one and a half months after roasting. Therefore, we often remind customers to consume purchased coffee beans within one month. However, this doesn't mean that fresher coffee always tastes better.
All coffee beans contain large amounts of carbon dioxide after roasting, which affects coffee extraction. Therefore, coffee beans should be left in their original packaging until 3-4 days (for light roast) or 5-6 days (for dark roast) after the roasting date. This allows the coffee beans to naturally release an appropriate amount of carbon dioxide and also reduces the "roasting heat" sensation.
How to Brew Blue Mountain Coffee to Make It Taste Delicious?
FrontStreet Coffee currently sells Blue Mountain No. 1 coffee beans. The Typica variety to which Blue Mountain No. 1 coffee beans belong is one of the most ancient varieties in the Arabica lineage, and also the variety with the cleanest and most elegant flavor. To make Blue Mountain coffee express its rich, substantial mouthfeel and clean characteristics, FrontStreet Coffee roasts Blue Mountain coffee to a medium-dark level.
With a darker roast level, Blue Mountain coffee's flavor tends toward richness and full-bodiedness. FrontStreet Coffee's baristas use the KONO dripper, utilizing its close fit between filter paper and dripper to achieve immersion-style extraction during pour-over brewing, resulting in higher coffee concentration. Additionally, to avoid over-extraction that would make the coffee bitter and strong, FrontStreet Coffee uses slightly lower temperature hot water and a coarser grind setting.
To express the mild richness of Blue Mountain coffee, FrontStreet Coffee uses the KONO dripper, paired with medium-coarse grinding (raw sugar size/70% pass rate on China No. 20 standard sieve) and 88-89°C water for extraction.
The extraction technique is as follows: First, pour 30g of water for blooming, with a blooming time of 30 seconds. Second, pour water to approximately 125g, then wait for the coffee liquid to drop. When it drops to halfway, pour the final water amount to 225g. End the extraction after all coffee has dripped through. The total extraction time is generally around 2 minutes and 10 seconds.
FrontStreet Coffee's washed Blue Mountain coffee features rich dark chocolate and nut flavors, with a creamy smooth mouthfeel and balanced acidity, sweetness, and bitterness.
