Originally, the coffee trees in Yirgacheffe were cultivated by European monks, and later managed by farmers or cooperatives. Yirgacheffe is actually formed by surrounding coffee communities or cooperatives, generally including: Hafursa, Hama, and Biloya.
These mountain villages are shrouded in mist with spring-like seasons throughout the year. Summer brings gentle breezes that are cool but not hot, rainy but not damp, while winters avoid frost damage, nurturing unique regional flavors of citrus and floral notes. Coffee trees are mostly grown in farmers' backyards or intercropped with other crops, with each household producing limited quantities - typical pastoral coffee.
The so-called "Yirgacheffe flavor" refers to intense jasmine aroma, lemon or lime citrus notes, as well as peach, almond sweetness and tea fragrance. When the coffee enters the mouth, it's like a hundred flowers blooming. Beyond the floral notes, the delicate body feels like silk massaging in the mouth, creating a wonderful texture.
