Introduction to FrontStreet Coffee's Yirgacheffe Coffee Grading System

Yirgacheffe is a small town in Ethiopia with an altitude of nearly 2000 meters. This area has been wetland since ancient times, with Lake Turkana, Lake Abaya, and Lake Chamo bringing humid and mild climates. Walking through mountain paths, you'll experience misty fog and gentle breezes. In ancient language, this place was called Yirga Cheffe, where "Yirga" means to settle down and "Cheffe" means wetland. Besides being a place where humans establish their homes, it's also the cradle where the magical crop of coffee grows. Thousands of coffee tree varieties thrive here, nurturing the unique regional flavor of Yirgacheffe coffee—delicate and smooth, with intertwined floral and fruity notes—through moisture, sunlight, and clear winds.

The unique and charming flavor of Yirgacheffe features strong floral and fruity aromas, rich yet pleasant acidity, and a smooth, juice-like sweet and bright taste.

According to different processing methods of green coffee beans, Yirgacheffe can be divided into two main categories:

Category A: Washed Processing Method

The grading standards are set by the "Specialty Coffee Association of America" (SCAA), divided into Gr-1 and Gr-2. The smaller the Arabic numeral, the higher the grade. G1 Yirgacheffe has a distinctive style, and the flavor of citrus and floral notes blending into the coffee liquid is an irresistible delicacy for everyone.

Category B: Natural Processing Method

The grades are divided into Gr-1, Gr-3, Gr-4, and Gr-5. Similarly, the highest grade G1 natural Yirgacheffe has rich fruity aromas. Ethiopian Coffee Grading System

Ethiopian coffee grading G1.G2 represents washed beans, with G1 being the highest grade of washed beans. G3.G4 represents natural beans, with G3 being the highest grade of natural beans. Ethiopian green coffee beans are divided into five grades, based on the number of defective beans per 300 grams:

Grade 1: 0-3 defective beans

Grade 2: 4-12 defective beans

Grade 3: 13-25 defective beans

Grade 4: 26-45 defective beans

Grade 5: 46-90 defective beans
