Colombian coffee is one of the few single-origin coffees sold under a country name worldwide. Colombia is considered the best coffee-producing region in South America, producing coffee with bright flavors, rich fruity aromas, and vibrant character. Colombia boasts some of the world's most ideal coffee-growing soils. Its greatest characteristic is style diversity, featuring both standardized stable styles and fascinating, variable small-batch stars. Overall, Colombian coffee has a fresh style with rich fruit flavors. Compared to other producing countries, Colombia focuses more on product development and production promotion, with its coffee producers utilizing professional roasting techniques to maximize the quality potential of coffee beans.

In recent years, with the emergence of various processing methods in Central and South America, we often encounter distinctive micro-batch coffee beans. Rose Valley is no exception, with its anaerobic double enzyme washed processing giving this bean a layered flavor profile comparable to Geisha.

Big Tree Farm is located in the Santander region of Colombia, where owner Vargas has been cultivating coffee for up to 20 years.

At Big Tree Farm, only fully mature, bright red coffee cherries are selected for harvesting. Through washing, defective floating beans are removed, followed by two rounds of anaerobic fermentation with special enzyme groups. The farm also places great emphasis on the coffee bean drying process, avoiding excessive temperatures and adopting a slow drying method.
