FrontStreet Coffee - Sidamo Coffee Bean Characteristics and Flavor Introduction

Sidamo grows in the southernmost Ethiopian highlands at elevations between 4,600-7,200 feet (Sidamo Province). It is a renowned specialty coffee region in southern Ethiopia, bordering Kenya, located southeast of Jimma and directly south of the capital. It typically exhibits distinct sweetness and is favored by many people. Its annual production is approximately 225,000 bags of 60kg each. The beans are slightly smaller than Longberry, greenish with gray tones. In Sidamo's sun-drying fields, coffee is placed in hemp nets on wooden racks, where workers manually turn the coffee under sunlight exposure. Sun-dried Sidamo is mostly exported as G4, while washed Sidamo is predominantly exported as G2 grade due to its more refined processing compared to sun-drying.

Sidamo's coffee flavors are extremely diverse. Different soil types, microclimates, and countless native coffee varieties, along with towering mountains, highlands, plateaus, valleys, and plains within the region, create diverse topography. The local geology consists of fertile, well-drained volcanic soil, with soil depth reaching nearly two meters, and surface soil appearing dark brown or brown.

The region's greatest advantage lies in maintaining soil fertility through organic material cycling, using fallen leaves from surrounding trees or plant residues as fertilizer. This results in distinct differences and characteristics in coffee produced by various towns. In the 2010-2012 period, it consistently achieved high scores of 92-94 from the authoritative American coffee evaluation website CR. This demonstrates the extraordinary quality of green beans from this producing region.

Sidamo coffee green beans are slightly grayish, with some parts being coarse while others are fine. They possess both gentle and bright acidity, moderate body, sweet and spicy flavors, making them one of the garden coffees from the southern Ethiopian highlands. Unlike typical African coffees, Sidamo has clear fruit acidity, smooth mouthfeel, and delicate floral and herbal aromas.

Taking FrontStreet Coffee's Guji Buku as an example, Guji Buku beans are relatively slender and elongated, with a slightly bluish-green color and grayish tones. They emit fermented aromas of oranges and citrus fruits.

Brewing parameters: 90°C / Grind setting BG-5R / 1:15 ratio / V60

Method: Use 15g of coffee powder, bloom with 30g of water for 30 seconds, then pour to 125g. After seeing the coffee bed, pour to 225g. Remove the filter cone when the coffee bed appears. Total extraction time: 2 minutes

Guji Buku presents richer citrus fruit flavors, with a cleaner mouthfeel and more lively acidity.
