FrontStreet Coffee - Introduction to Geisha Grade Classification
Taking FrontStreet Coffee's Hacienda La Esmeralda red label, green label, and blue label as examples:
Premium - Red Label [Competition Batch]
Grown at altitudes of 1,600-1,800 meters.
Cupping score of 90 points or above.
Primarily from Jaramillo and Cavas Verdes estates, representing the highest quality Geisha beans.
Geisha beans harvested from the highest elevations of the Boquete mountain region, featuring special, bright floral aromas and citrus fragrances.
Coffee at this grade is processed into either natural or washed green beans.
Can only be purchased through the annual global auction.
Hand-pour of Panama Hacienda La Esmeralda Red Label. 15g of coffee, ground to medium-fine (sugar-sized particles), V60 dripper, 90°C water temperature. First pour with 30g water for 30-second bloom, then pour to 105g and pause. Wait until the water level in the coffee bed drops to halfway before pouring again. Slowly and evenly pour until reaching 225g. Finally, you can gently swirl the dripper to increase extraction. Water-to-coffee ratio 1:15, extraction time 2:04.
Secondary - Green Label [Reserve Batch]
Grown at altitudes of 1,600-1,800 meters.
Micro-batch blend from three different estates: Jaramillo, Quiel, and Cavas Verdes.
Although not the highest competition-grade beans, this grade of Geisha still maintains the classic flavor profile of Geisha coffee - floral notes, fruit aromas, citrus acidity, and a thick, juicy mouthfeel.
Selected from perfectly ripe coffee cherries to create rich sweetness, bright fruit acidity, and delicious flavors.
This grade of Geisha beans is also available in both washed and natural processed green beans.
Regular - Blue Label [Selected Batch]
Grown at altitudes of 1,500 meters.
Blend from three different estates: Jaramillo, Cañas Verdes, and El Velo.
Subtle floral notes, fruit acidity, and sweetness, with a less full-bodied mouthfeel.
This grade of Geisha beans is only available in washed processed green beans.
Hand-pour of Panama Hacienda La Esmeralda Blue Label. 15g of coffee, ground to medium-fine (sugar-sized particles), V60 dripper, 89°C water temperature. First pour with 30g water for 30-second bloom, then pour to 105g and pause. Wait until the water level in the coffee bed drops to halfway before pouring again. Slowly and evenly pour until reaching 225g. Finally, you can gently swirl the dripper to increase extraction. Water-to-coffee ratio 1:15, extraction time 2:04. (For a brighter flavor, use larger water flow to stir; for a smoother taste, use gentle water flow for extraction.)
