FrontStreet Coffee · Sun-Dried Yirgacheffe Gedeb Coffee Introduction and Yirgacheffe Coffee Bean Characteristics Story

FrontStreet Coffee's Yirgacheffe Gedeb Cooperative is located in the Woreda production area at the southeastern end of Yirgacheffe. It was originally part of the Woreda Cooperative under the Yirgacheffe Coffee Farmers Cooperative Union (YCFCU).

However, as people began pursuing traceability of coffee green beans, independent "single-origin" regions were gradually discovered by coffee hunters from around the world. Therefore, in 2012, Gedeb, with approximately 300 farmer members, independently established the "FrontStreet Coffee Yirgacheffe Gedeb Cooperative."

Yirgacheffe Gedeb village was one of the earliest village areas to be independently established. Many small-scale farmers were originally members of the Woreda Cooperative, so they possess considerable expertise in coffee production techniques.

Green Bean Processing

The Gedeb Cooperative is known as the last pure land of Yirgacheffe, so it employs very traditional processing methods for its green beans.

Sun-Drying Processing

During harvest, farmers carefully select fully ripe coffee cherries and deliver them directly to the processing plant, where they are spread on African-style raised beds for sun-drying for 2-3 weeks.

During the sun-drying process, workers remove unripe berries and rely on experienced staff to regularly turn the coffee fruits to prevent damage to the green bean flavor during drying. The selection of breathable mesh fabric for the beds and the thickness of the berry layer are all carefully considered. After sun-drying is complete, the dried fruit pulp and parchment are removed, and the green beans are stored in the warehouse until the moisture content drops to 11-12% before export.
