La Granja is located in the Santander region of Colombia. The farm owner, Vargas, has been growing coffee at La Granja for up to 20 years. At La Granja, only fully mature coffee cherries that appear bright red are selected for harvesting. Through washing, defective beans are removed, and anaerobic fermentation is carried out with special enzyme groups. Great attention is also paid to the drying process of the coffee beans, avoiding excessive temperatures during drying and adopting a slow drying method.
