When it comes to Bourbon coffee, we typically think of Red Bourbon, Yellow Bourbon, and the increasingly popular Pink Bourbon in recent years. Yesterday, FrontStreet Coffee introduced you to a naturally low-caffeine coffee—Pointed Bourbon! Today, FrontStreet Coffee is here to share another rarely heard of Bourbon variety—King Bourbon!
Bourbon Coffee
In the world of coffee beans, there are three major varieties: Arabica, Robusta, and Liberica. Bourbon coffee belongs to the Arabica species.
The name Bourbon originates from Bourbon Island, also known as Réunion Island. At that time, the French made three attempts to introduce coffee from Yemen to Bourbon Island; however, it was the coffee from the latter two transplantations that survived and continued to propagate.
In 1841, a French missionary established a church on the French Bourbon Island. He later left Bourbon Island and went to Zanzibar, Bagamoyo, Saint Augustine, Bula, and several other African countries to establish new churches, planting coffee from Bourbon Island in each church. From then on, "Bourbon coffee" also existed on the African continent.
Bourbon coffee is actually a coffee variety that mutated from Typica, belonging to a branch of the Arabica species. Along with Typica, it is one of the ancient varieties among existing Arabica coffees.
Bourbon coffee is named according to the color of the coffee fruit when ripe, such as Red, Yellow, Orange, and Pink Bourbon. Among these, Orange Bourbon has lower yields, while Pink Bourbon has extremely limited yields.
King Bourbon
The King Bourbon variety is extremely rare, and presumably, not many people have heard of it!
King Bourbon, also known as Bourbon Rey, is a Bourbon mutation discovered at the Divisadero farm in Costa Rica. So far, it has only been found at this specific farm.
The King Bourbon coffee tree is relatively tall, with wide spacing between branches, larger leaves, and bronze-colored young leaf tips.
Unlike common Bourbon coffee beans, which are typically small in size, King Bourbon coffee beans are larger, appearing somewhat similar to Pacamara in appearance.
FrontStreet Coffee brewed a pot of anaerobic honey-processed King Bourbon coffee, with parameters and flavor description as follows:
Parameters: 15g coffee dose, Hario V60 dripper, water temperature 89°C, medium-fine grind, coffee-to-water ratio close to 1:15.
Brewing Method
FrontStreet Coffee chose to use a segmented extraction brewing method for extraction.
Use 29g of water for blooming. When the surface of the coffee bed changes from moist to dry, end the blooming process, with a blooming time of 30 seconds. Use a small water stream to pour water in the center until reaching 120g for segmentation. When the liquid level drops and is about to expose the coffee bed, continue pouring to 230g and stop. When the liquid level drops and is about to expose the coffee bed, remove the dripper. (Timing starts from blooming) Total extraction time is 1'40".
Flavor Profile
The dry aroma has rich fermentation and berry scents. Upon tasting, there are acidic notes of passion fruit, lime, and citrus, with a light fermentation aroma. The mid-section features nutty fragrance and dried fruit sweetness, with persistent sugarcane aftertaste. The mouthfeel is relatively thick and full-bodied.
