Honduras is located in northern Central America, bordering the Caribbean Sea to the north and the Pacific Ocean's Gulf of Fonseca to the south. It borders Nicaragua and El Salvador to the east and south, and Guatemala to the west, consisting mostly of mountains and plateaus. It has a tropical climate with mild temperatures and abundant rainfall, making it ideal for coffee.

To the east and south, it shares borders with Nicaragua and El Salvador, while to the west, it adjoins Guatemala. The country consists primarily of mountains and plateaus. With its tropical climate, mild temperatures, and abundant rainfall, it provides an ideal environment for coffee cultivation.

Neiry Suaba Oliana Aguilar inherited the plantation from her father and family. To ensure coffee quality, they send their coffee to the ARUCO ENTERPRISE association for cupping and quality control every year. The plantation's name, Las Gemelas (The Twins), was chosen by Neiry to commemorate the birth of her twin daughters.

Historically, the Neiry family has grown Yellow Catuai. This year, Neiry adjusted her planting approach by transplanting the existing Yellow Catuai and planting a new batch of Red Catuai in its place.

At the same time, she broke from her family's traditional washed processing method and innovatively experimented with natural processing, using this approach to participate in competitions. The two experimental competition batches were processed using different methods: one underwent 72 hours of pre-drying fermentation before drying, while the other experienced 90 hours of pre-drying fermentation before drying. This award-winning coffee bean comes from the 72-hour extended fermentation batch.

Variety (Red Catuai)

Red Catuai is a natural variant of the Arabica Bourbon variety, discovered in Brazil in 1937. Compared to other coffee varieties, Red Catuai produces more compact fruits that are challenging to harvest. It possesses strong disease resistance, making it suitable for cultivation at high altitudes. The resulting coffee features delicate and clean acidity.

Red Catuai exhibits medium acidity with a smooth, mellow mouthfeel. It offers excellent body and sweetness, with a gentle character that allows it to blend harmoniously with most coffee beans without significantly altering their flavor profiles.

V60 Dripper Brewing

Water Temperature: 90-92°C

Coffee Dose: 15g

Coffee-to-Water Ratio: 1:15

Grind Size: Medium-fine, similar to granulated sugar (BG-5R grind size, which achieves 60% pass-through through a China standard #20 sieve)

Brewing Technique: Poured in stages. Begin with 30g of water for a 30-second bloom. Using a small water stream, pour in a circular motion to 125g, then pause. When the water level drops and is about to expose the coffee bed, continue pouring to 227g and stop. Remove the dripper when the water level drops again and is about to expose the coffee bed. (Timing starts from the beginning of the bloom) Total extraction time: 1'54".
