Typically, immersion and drip coffee brewing methods are two different worlds with little overlap. The siphon pot (also known as a vacuum pot), with its distinctive appearance, can create coffee that has both a full-bodied texture and remarkable clarity.
Siphon Pot: A Brewing Device Based on Scientific Principles
How does a siphon pot work? When water in the lower chamber of the siphon is heated, gases begin to escape, creating a vacuum state that causes water to move to the upper chamber. When the heat source is extinguished, the air at the bottom begins to cool, allowing the coffee to return to the lower chamber. Although it sounds complex, completing the entire process isn't that difficult (though brewing siphon coffee that tastes consistently good is quite challenging).
Extraction Principle:
By heating the water in the lower pot to generate high-temperature steam, the steam in the sealed siphon expands when heated, and air pressure pushes water into the tube and draws it to the upper pot for extraction. When heating of the lower pot stops, the air in the lower pot gradually cools and contracts, while the coffee liquid in the upper pot flows down to the lower pot due to loss of support from the steam in the lower pot.
The siphon pot (Syphon), commonly known as "Saifeng pot" or "siphon type," is one of the most popular coffee brewing methods in coffee shops. Although the siphon pot has the alias "Saifeng type," it has nothing to do with the siphon principle. Instead, it uses water heated to generate steam, creating pressure that pushes hot water from the lower bulb to the upper pot, and then sucks the water from the upper pot back down after the lower pot cools.
FrontStreet Coffee Teaches You How to Brew Siphon Coffee
① Boil 240cc of water
② Add 15 grams of coffee grounds to the upper siphon pot
③ When the water in the lower pot boils, straighten the upper pot and insert it into the lower pot
④ When the coffee grounds have absorbed sufficient water, perform the first stir
⑤ Wait for approximately 20 seconds for pre-infusion
⑥ Perform the second stir
⑦ Wait for approximately 20-30 seconds for pre-infusion
⑧ Turn off the heat and perform the third stir
⑨ Wait for the coffee liquid in the upper pot to flow to the lower pot, and it's ready to serve
