Paradise Estate is located in the Cauca province of Colombia. According to FrontStreet Coffee's understanding, Paradise Estate is a coffee estate that Mr. Diego Samuel began operating in 2008. Initially, it was just a small 2.5-hectare family-style estate. The owner invested the surplus from each year's harvest into coffee agriculture research and continuously studied how to better produce specialty flavors.
In 2015, he participated in a local regional competition for the first time, and Colombia Paradise Estate coffee beans won first place. After becoming famous overnight, he gained recognition from the industry and became more motivated to promote the cultivation of specialty coffee. Currently, Colombia Paradise Estate coffee beans mainly include varieties such as Bourbon, Laurina, Geisha, and Castillo, with plans to try more different varieties.

The variety of FrontStreet Coffee Paradise Estate Cherry Blossom coffee beans introduced by FrontStreet Coffee is Castillo. Castillo is currently a coffee variety being promoted for cultivation in Colombia. It was developed in 2005 by Colombia's coffee research institution based on enhancing plant disease resistance. According to FrontStreet Coffee's understanding, Castillo is the result of five generations of hybrid selection between the Timor and Caturra varieties. Timor is a natural hybrid of Arabica and Robusta, with tall plants that are resistant to leaf rust.
Caturra is a natural mutation of the Bourbon variety, with short plants and higher yields than Typica and Bourbon. It well inherits Bourbon's excellent flavor characteristics, allows for close plant spacing, and enables more intensive planting per unit area. However, it is also susceptible to leaf rust. The Castillo variety, created through hybridization of these two varieties, inherits Caturra's excellent flavor characteristics while also being resistant to leaf rust like the Timor variety, thus it has been widely promoted for cultivation.

Using Yangjia semi-direct fire 800n, 300g green beans as an example. Set the drum temperature to 190°C when entering the drum, heat power to 140, and air damper to 3; Return temperature point at 1'42", when drum temperature reaches 140°C, open air damper to 4, heat power unchanged; When drum temperature reaches 151.8°C, the bean surface turns yellow, grassy smell completely disappears, entering the dehydration stage. When drum temperature reaches 150°C, adjust heat power to 120, air damper unchanged. At 8'38", ugly wrinkles and black spots appear on the bean surface, toast smell obviously changes to coffee aroma, which can be defined as the prelude to first crack. At this time, listen carefully for the sound of first crack. First crack starts at 9'07", open air damper to 4, develop for 2'10 after first crack, and finish at 195°C.

For brewing technique, FrontStreet Coffee uses a three-stage pouring method. First, use 30g of water for blooming, bloom for 30 seconds; use a small stream to pour water to the center to 125g in sections, and when the water level drops and is about to expose the coffee bed, increase the water flow to pour to 225g and stop. After all the coffee liquid has filtered through, remove the dripper. (Start timing from the beginning of blooming) Extraction time is between 2'00" and 2'10".
