Kopi Luwak, originally known as Musang Coffee, originates from Indonesia. Its flavor is somewhat similar to Indonesian Mandheling coffee but has an additional special fermented taste. Compared to Mandheling coffee, it is smoother and lacks the earthy flavor of Mandheling. True Kopi Luwak is one of the most expensive coffees in the world, truly the finest among specialty coffees.

You may have heard of Kopi Luwak in other places, but it's not necessarily genuine Kopi Luwak—it might just be coffee with Kopi Luwak flavor. True Kopi Luwak is recognized as one of the world's ten most expensive coffees and originates from the musang, an animal found on Indonesia's Sumatra island. The musang is a wild omnivorous animal that locals call Luwak. It has a pointed mouth, dark gray fur, and is an omnivorous nocturnal creature. With its keen sense of smell, it identifies the sweetest and fullest coffee cherries on coffee trees and occasionally picks some coffee berries as snacks. They like to climb coffee trees to select mature, sweet, and fully red coffee fruits to eat.

The Natural Processing Method

Musangs eat the ripest coffee cherries, removing the outer skin before swallowing them and sucking on the sweet but scarce pulp. As the coffee fruit pulp passes through the musang's digestive tract, it naturally ferments within its body. Due to the exceptionally hard texture of coffee beans, they are difficult to digest. After intimate contact with the intestines, they are excreted along with feces. The feces containing coffee beans pass near the reproductive organs, causing the beans to be coated with musk oil secreted by these organs, adding special flavor dimensions. Experienced workers then manually select and collect them from the forest for processing. It's said that about 1,300 beans must be collected to yield 100 beans that can become genuine Kopi Luwak.

This wonderful processing process replaces traditional washed, natural, and other coffee bean processing methods, reducing the acidity and bitterness in the original coffee beans and giving them unique flavors with a particularly aromatic and mellow taste. Kopi Luwak has a consistency close to syrup, leaving a light minty cool feeling in the mouth after drinking—something not found in regular coffee. Its rich, round, and sweet taste is also unmatched by other coffee beans.

Rarity and Production Concerns

Musangs themselves are relatively rare animals with small populations, and they are nearly impossible to domesticate. Musangs don't eat much, so their natural excrement is not abundant. Additionally, only about 30% of the usable coffee beans in musang excrement can be utilized. Coupled with losses from cleaning and grinding, the annual production of genuine "Kopi Luwak" does not exceed 400 kilograms. Therefore, there are very few "Kopi Luwak" beans circulating in the market, making them extremely precious. Some people exaggerate that after drinking Kopi Luwak, they don't want to brush their teeth for days, just to repeatedly savor its unique flavor—showing how captivating it is. These coffee beans pass completely unchanged from the musang's body and are excreted with feces. This is the most primitive "natural fermentation method" within the body, which creates the musang's unique flavor.

However, some coffees labeled as Kopi Luwak on the market are not necessarily genuine Kopi Luwak or might just be coffee with Kopi Luwak flavor. Some businesses saw the commercial opportunity of Kopi Luwak, leading to captive breeding for production. Now, the production process of "Kopi Luwak" has become cruel. Initially, "Kopi Luwak" was discovered when people accidentally collected musang droppings, but now, these animals are confined by humans, losing their freedom and beginning a tragic life of being artificially fed coffee fruits to produce coffee beans.

In fact, "Kopi Luwak" produced through artificial farming has almost become nothing more than a gimmick because those coffee beans are not selected by the musangs themselves but are forced upon them by humans. Moreover, these animals are naturally very shy, timid, and difficult to domesticate. After losing their freedom and living in small cages, being forced to eat coffee fruits and excrete all day, they become sick and start showing crazy behaviors like biting companions and themselves. Eventually, they may die due to this cruel coffee production method.

Flavor Profile and Characteristics

So what makes Kopi Luwak's taste different?

To better express the herbal flavors and rich mouthfeel of Kopi Luwak, FrontStreet Coffee's roaster uses medium-dark roasting for Kopi Luwak beans. Medium-dark roasted beans generally have a higher dehydration rate, so they weigh less. During brewing, the powder doesn't completely sink to the bottom. Water is immediately absorbed upon initial injection. Due to vigorous degassing, bubbles surround the powder, creating channels. The fresher the beans, the longer these channels persist, causing the water level to drop quickly.

Using segmented extraction, bloom with twice the amount of water as the coffee grounds—30g of water for 30 seconds. The blooming process is necessary to allow the coffee grounds to release internal carbon dioxide gas, making the subsequent extraction more stable. Use a small water flow in circular motions until reaching 125g, then continue pouring to 225g and stop. Remove the dripper once the water has completely dripped through.
