Whether using a V60 dripper or a coffee clever dripper for brewing coffee, both are considered forms of pour-over coffee. The definition of pour-over coffee is a method where hot water is poured to dissolve coffee powder in water, and the extracted liquid passes through filter paper or a filter screen at a natural speed before dripping out.
FrontStreet Coffee believes that the charm of pour-over coffee lies in its clean taste, as well as its ability to fully extract the aroma and sweetness from coffee while effectively controlling the excessive release of bitter substances.
V60 Coffee Dripper Features
V60 refers to the coffee dripper having a 60-degree angle, and the spiral rib design on the cup wall can effectively regulate the even flow of water through the coffee powder layer.
The dripper's star-chasing design focuses on the speed of water level decline, allowing coffee powder particles to achieve better extraction with a relatively fast flow rate. The internal ribs adopt an arcuate vortex structure design to assist in accelerating water flow, extending from the bottom to the top, indicating smooth exhaust effects. The curved ribs increase the water flow path, thereby increasing the contact time between coffee powder particles and water.
Coffee brewed with a V60 dripper has a clean taste and rich layers.
Coffee Clever Dripper Features?
The so-called "clever dripper" is a funnel with an embedded valve at the bottom, which unlike the V60 dripper, is not affected by factors such as water flow when brewing coffee. The clever dripper can achieve a soaking effect before the piston is opened, allowing for more thorough extraction of substances from the coffee.
Although it also uses an immersion extraction method, it differs from a French press. In the clever dripper, after the extraction process is complete, the coffee oil and fine powder in the coffee liquid will first pass through filter paper before flowing out through the open valve. The taste is cleaner than a French press that uses a metal mesh to separate grounds, with more distinct layers.
The clever dripper combines the advantages of a French press and conical/flat-bottom coffee drippers. It is simple, convenient, and easy to use. It extracts through immersion and doesn't require much technique. If you find it difficult to master a stable water flow and cannot accept the fine grounds from a French press, then the clever dripper is an easy-to-operate choice that also balances flavor.
There is a piston at the bottom of the cup, which normally stays in a lowered position (supported by four feet that keep it suspended). When water is poured in, it closes under pressure, and the piston firmly blocks the water flow. When placed on a container, the piston below is pushed up, and the coffee flows out.
Coffee brewed with a clever dripper has a clean taste, and overall it is fuller than that from a V60 dripper.
Which Dripper is More Recommended for Coffee Beginners?
In this case, we need to first consider our own needs. If you want to experience richer layers and also learn more pour-over coffee techniques, FrontStreet Coffee recommends choosing a V60 dripper. If you want to drink stable, full-bodied coffee and find it difficult to control water pouring, FrontStreet Coffee recommends choosing the clever dripper.
What's the Difference Between Coffee Brewed with V60 and Clever Dripper?
First, choosing freshly roasted coffee beans will result in better aroma and flavor. Currently, all coffee beans sold by FrontStreet Coffee are shipped within 5 days after roasting, with the optimal tasting period being 5-35 days after the roasting date printed on the back label.
Both coffee drippers use the same water temperature, coffee grind size, and coffee-to-water ratio. Taking the Costa Rica Mozart Coffee Beans sold by FrontStreet Coffee as an example, we recommend using medium-fine grind (fine sugar size/80% pass-through rate with China No. 20 standard sieve), water temperature of 90-91°C, and a coffee-to-water ratio of 1:15 (i.e., 1g coffee powder with 15g water). This time, FrontStreet Coffee will use 15g of coffee powder for the brewing demonstration.
Clever Dripper Brewing Steps:
Fold the filter paper and place it inside the clever dripper, place the clever dripper on a container, and use hot water to wet the filter paper while preheating the equipment. Then move the clever dripper to an electronic scale (the valve will automatically close at this time), and pour the ground coffee into the center of the dripper.
First, pour 30g of hot water, start the timer, and let it bloom for 30 seconds. After blooming, pour hot water to 225g, then let it steep for 1'50". After steeping is complete, move the clever dripper to a container and open the valve to filter the coffee liquid from the dripper. The entire process takes about 15 seconds, with a total coffee extraction time of 2'05".
The clever dripper-brewed Mozart coffee exhibits full-bodied grape raisin sweetness, rich berry sweet and sour notes, and a pineapple-like aftertaste.
V60 Dripper Brewing Steps:
Fold the filter paper and place it inside the dripper, then place it on a coffee pot. Use hot water to wet the filter paper while preheating the equipment. Then pour out the hot water from the pot and pour the ground coffee into the center of the dripper.
Use 30g of water to fully wet the powder layer into a "hamburger" shape and let it bloom for 30s, then proceed with the second pour. For the second pour, FrontStreet Coffee used a steady medium-fine water flow in circular motion to 125g, then stopped. When the water level dropped to 2/3 of the powder layer, the third pour was made. The third pour continued with a medium-fine water flow in circular motion to 225g to finish the pouring, with a total extraction time of about 2'00".
The V60-brewed Mozart coffee exhibits the sweetness of grape raisins, osmanthus fragrance, bright orange-like acidity, and a pineapple-like aftertaste.
