Unlike other coffee extraction methods that use hot water, cold drip coffee is characterized by the use of cold water for a prolonged extraction period of 3-12 hours. The extracted coffee is not consumed immediately but instead placed in a sealed container and refrigerated for 2-5 days to continue maturation, which allows for the appreciation of even smoother flavors. Well-extracted cold drip coffee can provide a better taste and aroma than red wine. It can be enjoyed according to personal preference by adding ice or cold water, or it's also excellent with sugar and milk. Generally, this extraction method of steeping coffee grounds in cold water for extended periods is loved by many people.

Extraction Principles

The extraction utilizes the pressure of water droplets falling from above to extract coffee. Water is added to the upper chamber, coffee grounds are spooned onto filter paper, and then the slow drip filtration method is employed, requiring the use of dark-roasted, very finely ground coffee. The appropriate extraction speed is 1 drop every 1.5 seconds, which can be adjusted using the flow rate control switch.

Cold drip coffee extracted with cold water is more popular in summer. Compared to coffee brewed with hot water, it has a less acidic and astringent taste, and even with prolonged storage, the flavor doesn't change significantly. Additionally, caffeine only dissolves in water above 75°C, so cold drip coffee extracted with cold water contains virtually no caffeine and has less bitterness or astringency, while being rich in aromas of dark chocolate and smoke.
