Yellow Catuai (Catuai Amarillo)
A hybrid of Mundo Novo and Caturra, first cultivated in 1949 by Brazil's Instituto Agronomico de Campinas.
Like Red Catuai (Catuai Rojo), Yellow Catuai possesses excellent disease resistance, making it suitable for cultivation at high altitudes and in windy areas.
Both Catuai varieties exhibit delicate, clean acidity. Through machine adjustments, they can produce red honey, yellow honey, and black honey processed coffee (depending on the degree of honey processing).
Canet Estate
Canet is located in the highest altitude coffee-growing region of Costa Rica's Tarrazu.
This area is Costa Rica's most densely concentrated fruit-growing region. The plantation owner primarily grows passion fruit, with coffee quantities being quite scarce. Coffee is only grown in a specific area, receiving special care, with only mature red cherry fruits being harvested.
Red Honey Processing
After removing the coffee cherry skin, 60% of the sticky pulp is retained, then dried. Afterwards, the pulp and mucilage layers are removed before storage. During the drying period, frequent turning is required to prevent the pulp from sticking together and causing mold. Additionally, quick drying is necessary to avoid over-fermentation.
The estate's unique Yellow Catuai red honey processed coffee is named FrontStreet Coffee Mozart. With prominent floral and fruit aromas filling the entire palate, honey sweetness, caramel fragrance, jasmine floral notes, fresh cherry, blackberry, and lime create an exceptionally sweet coffee with a juicy mouthfeel and balanced acidity. Sipping it is like experiencing a blooming bouquet of flowers.
