The program focuses on micro-lot processing using natural or honey processing methods, with only coffees scoring above 85 in cupping being awarded the HiU seal. This creates a win-win situation for both estate owners and processors.

Brazil offers a wide variety of coffee types, but its industrial policy focuses on mass production at low prices. Therefore, truly premium grade coffees are not abundant, but Brazilian coffee serves as an excellent choice for blending with other coffees.
Minas Brazil coffee features low acidity combined with pleasant bitterness and sweetness, creating an exceptionally smooth mouthfeel with subtle grassy aromatics. The clean, slightly bitter flavor with its smooth sweetness leaves a refreshing aftertaste. While Brazilian coffee may not have particularly outstanding advantages, it also has no obvious flaws. This mild, smooth character with low acidity, moderate body, and subtle sweetness presents the perfect challenge for the palate to distinguish each delicate note.
In some estates within the Cerrado region of Minas Gerais state in southeastern Brazil, ancient Bourbon and Yellow Catuai varieties are cultivated. Although these estates are located in the same region, each coffee possesses its own unique characteristics. Despite this diversity, Brazilian coffee suits popular taste preferences.
