Mocha coffee beans, as the name suggests, derive their name from an ancient port town on the Red Sea coast of Yemen. Coffee produced in ancient Yemen was exported from here to Europe and around the world. This was the earliest place to export coffee and the pioneer of coffee trade, hence its name. Yemeni people have had the habit of drinking coffee since ancient times, creating a coffee culture that is completely different from other regions in the world. The unique geographical location and climate conditions create the unique taste of Mocha coffee - rich in aroma, slightly sweet and slightly sour, with a fresh fragrance everywhere. Local farmers have created fertile terraces on the mountain slopes. The picking and processing of Mocha coffee are also completed entirely by hand. The initial processing of coffee beans uses the dry method, naturally air-dried under sunlight. This method is the most primitive and simplest, without using any mechanical equipment, and without washing, so sometimes there are small amounts of sand and small stones in Yemeni coffee beans. The roasting process of Mocha coffee is entirely done by hand, with the heat control depending on experience and feeling. From planting, picking to roasting, every process is completed in the most ancient way. Although the coffee beans roasted in this way have inconsistent colors, it is precisely this aroma mixed with rugged and wild taste that creates the unique Mocha coffee. No wonder some people call Mocha "the diamond on the coffee crown."

Yemeni coffee, with slightly different tastes and aromas, are all collectively called Mocha. They are mainly distributed in the mountainous areas around the capital Sana'a and the high-altitude mountainous areas between Sana'a and Hodeidah province. Yemeni Mocha coffee beans are small in size, high in density, and high in acidity, with a unique aroma. Compared with other famous coffee varieties, they have a stronger sour taste, as well as a mixture of malt, nuts, wine, chocolate and other spices, with a smooth taste and fragrant smell.
