Bourbon coffee (French: Café Bourbon) is a coffee produced from the Arabica coffee Bourbon cultivar. Bourbon coffee was originally cultivated on Réunion Island, which was known as Bourbon Island (le Bourbon) before 1789. It was later occupied by France and connected to the African continent and Latin America. It is now also one of the two most popular Arabica coffee production regions in the world. Bourbon coffee is typically grown at altitudes of 3,500 to 6,500 feet (1,062-1,972 meters).

The Bourbon variety, native to Bourbon Island in the Indian Ocean (now called Réunion Island), is a sub-species mutated from Typica. Along with Typica, it belongs to the oldest existing coffee varieties. When green fruits mature, they turn bright red, while the Yellow Bourbon variety is a hybrid of Bourbon with other varieties. Due to its lower yield and relatively poor resistance to wind and rain, it has not been widely cultivated. However, when grown in high-altitude areas, it exhibits excellent flavor performance and has become more common in recent years.

Yellow Bourbon matures with yellow fruits, initially discovered in Brazil and currently grown mainly there. It is generally believed to be a mutation resulting from the hybridization of the red-fruited Bourbon variety and a yellow-fruited Typica variant called "Amerelo de Botocatu."

Among the many coffee varieties in Brazil, Yellow Bourbon is one of the outstanding quality variants. While regular Bourbon changes from green to yellow to red, Yellow Bourbon's appearance only remains yellow. Yellow Bourbon grown in high-altitude environments and processed using natural sun-drying methods exhibits excellent flavor.
