Understanding Filter Cup Sizes and Coffee Brewing

When purchasing filter cups, we often see indications like "1-2 person servings" or "3-4 person servings." Different filter cup sizes and capacities affect the amount of coffee grounds used. So how should we brew when making coffee with different amounts of grounds?

The Yirgacheffe Region

Yirgacheffe itself is a small town with a population of about 20,000. The three adjacent small producing areas—Wenago, Kochere, and Gelena Abaya—produce coffee with flavors nearly identical to Yirgacheffe, so they are also classified under the Yirgacheffe region.

Yirgacheffe is similar to neighboring Sidamo in both culture and geographical environment, but Yirgacheffe seems to be especially favored with uniquely advantageous conditions. Top-quality Yirgacheffe coffee features floral notes, bright citrus acidity, lemon-like aromas, and a silky smooth mouthfeel.

The Worka Cooperative

The Worka Cooperative is located in the southern part of the Gedeb district. Established in 2005, it joined the renowned Yirgacheffe Coffee Farmers Cooperative Union (YCFCU) in the same year and is known for producing high-quality natural-processed Yirgacheffe coffee. The Worka Cooperative has approximately 300 coffee farmers. YCFCU was established in 2002 and includes 26 other cooperatives, serving over 45,000 coffee farmers.

Brewing Guide by Serving Size

Therefore, in this example, FrontStreet Coffee uses washed Yirgacheffe Worka. For a single serving, we typically use 15 grams with a 1:15 coffee-to-water ratio, water temperature of 90°C, medium-fine grind, and a brewing time of about two minutes. The entry presents distinct lemon and floral notes, with a finish reminiscent of lemon black tea.

Two servings: For one additional person, increase the grounds by 10 grams to 25 grams. Maintain the same 1:15 coffee-to-water ratio and 90°C water temperature. Since the brewing time will increase with more grounds, adjust to a coarser grind. The brewing time should be around 2 minutes and 20 seconds. Floral notes, lemon, and white grape juice acidity are prominent, with a substantial juice-like body.

Three servings: Attempting to brew with 30 grams of coffee, even using Key's #02 diamond dripper, proved somewhat challenging. FrontStreet Coffee chose BG's 6A setting, which is quite coarse; the brewing was divided into four pour stages: 40 grams of water for a 30-second bloom, separate pours at 160 grams, 240 grams, and 350 grams, with gradually increasing water flow. Finally, a large water flow was poured directly into the center until reaching 450 grams to complete brewing, with a total time of approximately 3 minutes and 30 seconds. The lemon black tea sensation was very distinct, accompanied by honey-like sweetness!

The editor believes that when brewing multiple servings and the amount of grounds increases, to avoid over-extraction due to extended brewing time, one can choose a coarser grind to slow down the coffee extraction rate. Increasing the water flow at the end primarily serves to reduce the concentration of the coffee liquid while quickly extracting a small portion of remaining extractable materials.
