Ethiopia: The Birthplace of Coffee

Ethiopia is the country where coffee was first discovered, and today, many wild coffee plants can still be found in the original forests for farmers to harvest. Ethiopia is a country plagued by poverty, drought, and constant civil war, but it remains one of the most important coffee-producing nations in terms of quality and production. In recent years, it has also become one of the finest and top-tier coffee-producing countries.

Premium Coffee Regions

Ethiopia has two finest coffee-growing regions: Yirgacheffe and Sidamo. Sidamo is located in a highland area in southern Ethiopia. Generally, most Mocha coffee uses city roast. Sidamo offers balanced acidity and appropriate body. In Ethiopia, people typically enjoy a cup of Mocha coffee for breakfast to replenish their energy and vitality for the day.

Coffee Grading System

Due to Ethiopia's relatively backward grading system, coffee can be classified by grade into Special (usually referring to washed Yirgacheffe and Sidamo), Grade 1, Grade 2, Grade 3, Grade 4, and Grade 5.

Processing Methods and Flavor Profiles

Washed processed coffee beans feature gentle and subtle aroma, soft and understated lemon acidity, high flavor consistency, and excel in mouthfeel. Meanwhile, naturally processed coffee beans have intense and prominent aroma, less noticeable lemon acidity, complex and varied flavors, with floral or fruity notes being their specialty.

Natural Process Considerations

Ethiopian natural processed beans often contain impurities such as small stones or branches, so special attention should be paid during grinding. Despite these minor flaws, they don't affect the taste. Most notably, Sidamo's Mocha coffee has extremely low caffeine content, making it a naturally low-caffeine coffee. After enjoying the mild taste of washed coffee, occasionally trying pure natural processed coffee to experience that wild and untamed desert character can be an excellent choice.

Ethiopia's Coffee Development

Ethiopia is currently the fastest-growing country in coffee production and development. Different regions not only create variations in coffee through different processing methods, but the same processing method can also produce different aromas and mouthfeels due to different processing techniques, often creating illusions. For example, the natural processed beans from Yirgacheffe and Sidamo have different aromas. Yirgacheffe's natural processed beans have higher moisture content, with mostly small-sized beans, featuring a lower and more stable aroma and a thicker mouthfeel. Sidamo's natural processed beans have an intense, overflowing strawberry aroma that is impressive, but with a thinner mouthfeel.

Brewing Recommendations

FrontStreet Coffee recommends brewing with water at 89-90°C, which brings out notes of cocoa and chocolate aroma, caramel cake sweetness, and a rich, smooth, and pure mouthfeel.
